- Drain sauerkraut and rinse with cool water. Put into a 5-qt pot. Add in sufficient water to cover the kraut and cook for 35 min. Remove from stove and drain.
- Fry the bacon well (don't drain the grease). Add in the onions and saute/fry till they are translucent/soft. Add in the kraut; stir well till well blended. Add in the tomatoes; stir. Cover and let simmer for 45 min, stirring occasionally. Cut sausage to 1-inch slices. Lay on top of kraut for about 15 min to hot up. Makes 4 servings.
