%20work%20well%20too.%3C/p%3E%3Cp%3ESomehow%20over%20the%20course%20of%20the%20last%20year%20or%20so%20I%20ended%20up%20with%20six%20jars%20of%20sauerkraut.%20It%20was%20like%20I%20had%20some%20mental%20block%20that%20prevented%20me%20from%20picking%20up%20a%20jar%20every%20time%20I%20saw%20them%20at%20Aldi.%20These%20are%20big%20jars%20too!%20I%20think%20I%20had%20in%20the%20back%20of%20my%20head%20that%20I%20wanted%20to%20make%20this%20sauerkraut%20soup%20again%20(I%20can%E2%80%99t%20believe%20that%20was%202012!?)%20which%20uses%20a%20lot%20of%20sauerkraut%20and%20just%20kept%20buying%20them.%20Luckily%20sauerkraut%20has%20a%20shelf%20life%20of%20like%20three%20years.%3C/p%3E%3Cp%3EI%E2%80%99ve%20been%20getting%20my%20local%20produce%20delivery%20even%20though%20not%20much%20is%20in%20season%20here%20(normally%20I%20let%20it%20lapse%20in%20the%20fall%20and%20pick%20it%20up%20in%20late%20spring)%20and%20ended%20up%20with%20an%20assortment%20of%20beets.%20I%20thought%20about%20making%20hearty%20beef%20borscht%20and%20then%20I%20remembered%20all%20that%20sauerkraut.%20Why%20not%20combine%20the%20two?%20Why%20not,%20indeed.%3C/p%3E%3Cp%3EI%20googled%20it%20to%20see%20if%20it%20was%20already%20a%20popular%20soup%20(it%20sure%20seems%20like%20it%20should%20be%20somewhere%20cold)%20and%20couldn%E2%80%99t%20find%20any%20real%20mentions%20of%20it.%20Lots%20of%20beef%20borscht%20(I%20made%20some%20back%20in%20March),%20lots%20of%20cabbage%20in%20borscht,%20a%20few%20sauerkraut%20soups%20but%20none%20that%20tied%20them%20all%20together.%20Until%20now.%3C/p%3E%3Cp%3EHonestly,%20we%20loved%20this%20soup.%20It%20was%20super%20easy%20to%20make,%20richly%20flavored,%20literally%20packed%20with%20vegetables%20and%20filling%20yet%20oddly%20not%20heavy.%20What%20else%20do%20you%20want%20on%20a%20cold%20winter%E2%80%99s%20night?%20Maybe%20some%20butter%20and%20bread%20on%20the%20side%20but%20really%20this%20is%20enough.%20If%20you%20like%20even%20one%20ingredient%20in%20this%20soup,%20you%20should%20make%20it.%20It%20was%20a%20real%20unexpected%20delight.%3C/p%3E%3Cp%3ERelated%3C/p%3E){kind=link}
