%20and%20I%20have%20a%2020-25%20page%20paper%20due%20on%20Monday%20at%203:30.%20Not.%20fun.%20But,%20that's%20what%20they%20pay%20me%20to%20be%20here%20for%20and%20all,%20so%20I'll%20do%20it.%20You%20just%20can't%20make%20me%20smile%20about%20it.%20At%20least%20not%20during%20the%20last%203%20weeks%20of%20the%20semester.%3C/p%3E%3Cp%3EON%20TO%20THE%20TASTINESS!%20Well,%20then.%20Today%20I%20went%20to%20an%20HP%20quiz%20(if%20you%20have%20to%20ask%20what%20HP%20stands%20for,%20I'm%20not%20telling%20you)%20and%20then%20came%20back%20and%20had%20a%20huge%20allergy%20attack,%20probably%20from%20sitting%20outside%20for%203%20hours%20at%20said%20quiz,%20and%20barely%20advanced%20on%20above-mentioned%20paper.%20Then%20I%20figured%20out%20what%20to%20make%20for%20dinner%20and%20realized%20I%20hadn't%20done%20my%20Saturday%20labor:%20making%20treats.%20Having%20spotted%20Ricotta%20in%20the%20fridge%20the%20other%20day,%20I%20already%20had%20one%20in%20mind.%3C/p%3E%3Cp%3EI%20made%20these%20before,%20about%20six%20months%20ago,%20actually,%20and%20the%20original%20recipe%20is%20from%20Rosa's%20Yummy%20Yums.%20I've%20posted%20it%20below%20with%20my%20changes.%20We%20don't%20have%20real%20lemons%20(or%20limes),%20which%20means%20I%20went%20with%20juice.%20Lime%20juice,%20instead%20of%20the%20original%20lemon.%20Still%20SUPER%20good.%20And%20they%20didn't%20take%20too%20long.%20Probably%20stuck%20to%20my%20one%20hour%20that%20I'm%20supposed%20to%20do%20for%20once.%20These%20should%20be%20even%20faster%20for%20a%20smaller%20batch.%20Quadrupling%20recipes%20really%20does%20make%20a%20difference.%20That%20much%20more%20flour%20to%20measure.%20And%20sugar.%20And%20baking%20powder.%20That%20much%20more%20butter%20to%20melt.%20And%20then%20mixing%20it%20all%20together%20has%20to%20be%20more%20careful.%20Then,%20no%20cooking%20spray.%20So%20have%20to%20grease%2048%20muffin%20holes%20by%20hand.%20Don't%20worry,%20I'm%20giving%20you%20the%20single%20batch%20recipe%20:)%3C/p%3E%3Cp%3EI'm%20fairly%20certain%20that%20these%20could%20be%20made%20more%20health-fully%20without%20sacrificing%20much%20(if%20any!)%20of%20the%20flavor%20and%20texture,%20but%20the%20house%20gets%20whole%20milk%20ricotta%20so%20I'd%20need%20to%20go%20buy%20the%20other%20stuff%20to%20find%20out.%20A%20summer%20project,%20I%20suppose.%20I%20hope%20that%20didn't%20scare%20you,%20they're%20really%20not%20bad%20as-is%20(203%20calories),%20which%20is%20why%20I%20think%20it'd%20be%20no%20problem%20to%20make%20them%20even%20better!%3C/p%3E%3Cp%3ELime%20Ricotta%20Muffins%3C/p%3E%3Cp%3EServes:%2012%20Time:%20about%2030-40%20minutes%3C/p%3E%3Cp%3E1.%20Preheat%20oven%20to%20200%C2%B0C%20(400%C2%B0F).%3C/p%3E%3Cp%3E2.%20Grease%20twelve%202%20%C2%BD%E2%80%9D%20by%201%20%C2%BC%E2%80%9D%20muffin-pan%20cups%20or%20line%20with%20paper%20baking%20liners.%3C/p%3E%3Cp%3E3.%20In%20large%20bowl,%20stir%20together%20flour,%20%C2%BD%20cup%20sugar,%20baking%20powder%20and%20salt.%3C/p%3E%3Cp%3E4.%20In%20medium%20bowl,%20with%20wire%20whisk%20or%20fork,%20mix%20together%20ricotta,%20milk,%20melted%20butter,%20eggs%20and%20lime%20juice.%3C/p%3E%3Cp%3E5.%20Make%20well%20in%20center%20of%20flour%20mixture%20and%20pour%20in%20ricotta%20mixture;%20stir%20until%20just%20moistened.%3C/p%3E%3Cp%3E6.%20Spoon%20batter%20into%20prepared%20muffin-pan%20cups.%3C/p%3E%3Cp%3E7.%20Sprinkle%20remaining%202%20tablespoons%20sugar%20over%20muffins.%3C/p%3E%3Cp%3E8.%20Bake%2020%20to%2022%20minutes,%20until%20muffins%20are%20golden%20brown,%20tops%20spring%20back%20when%20lightly%20touched%20or%20a%20toothpick%20inserted%20in%20center%20of%20muffin%20comes%20out%20clean.%3C/p%3E%3Cp%3E9.%20Immediately%20remove%20from%20pan;%20serve%20warm.%20Or%20cool%20on%20wire%20rack%20to%20serve%20later.%3C/p%3E%3Cp%3ETested%20variations:%3C/p%3E%3Cp%3E-%20Whole%20wheat%20flour,%20using%20flaxseed%20as%20egg%20replacement%3C/p%3E%3Cp%3E-%20White%20whole%20wheat%20flour,%20using%201%20packet%20stevia,%201%201/2%20Tbs%20agave%20and%202%20Tbs%20frozen%20apple%20juice%20concentrate%20instead%20of%20sugar%3C/p%3E%3Cp%3E-%20Half%20cottage%20cheese%20(I%20had%20less%20ricotta%20than%20I%20thought%20one%20day!)%3C/p%3E%3Cp%3ENutrition%20info%20for%20one%20muffin:%20Calories%20-%20203;%20%20%20%20Fat%20-%208.4g;%20%20%20%20Carbs%20-%2026.5g;%20%20%20%20Protein%20-%205.7g%3C/p%3E){kind=link}
