%20and%20I%20suppose%20it%20had%20been%20a%20long%20enough%20hiatus%20from%20cheesecake%20making,%20that%20I%20almost%20missed%20making%20them.%20Last%20night%20our%20best%20friends%20were%20having%20a%20cocktail%20party%20so%20I%20offered%20to%20make%20one%20and%20of%20course,%20they%20accepted%20with%20enthusiasm.%20Now%20that%20I've%20made%20one%20again,%20I%20can't%20believe%20I%20used%20to%20crank%20out%20something%20like%2010%20to%2015%20per%20day.%20However,%20when%20eating%20it%20again,%20I%20realized%20how%20much%20I've%20missed%20it.%20It's%20as%20amazing%20as%20it%20is%20festive.%3C/p%3E%3Cp%3EThis%20cheesecake%20is%20so%20delicious%20and%20always%20proves%20to%20wow%20the%20crowd.%20It's%20been%20tweaked%20so%20many%20times%20from%20the%20original%20recipe%20that%20I%20have%20the%20right%20to%20now%20call%20it%20mine,%20so%20I'm%20going%20to%20share%20it%20with%20all%20of%20you%20now.%3C/p%3E%3Cp%3ESanta%20Fe%20Green%20Chili%20Appetizer%20Cheesecake:%3C/p%3E%3Cp%3EIngredients%20For%20Cheesecake:%3C/p%3E%3Cp%3ECrust:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3ECrust:%3C/p%3E%3Cp%3E1.%20Preheat%20oven%20to%20325%20degrees.%20Place%20crushed%20tortilla%20chips%20in%20a%20bowl%20and%20drizzle%20the%20melted%20butter%20over%20the%20chips.%20Toss%20well%20to%20coat%20all.%20Press%20the%20mixture%20into%20the%20bottom%20of%20spring-form%20cheesecake%20pan,%20place%20in%20middle%20of%20oven%20and%20bake%20for%2012%20to%2015%20minutes,%20or%20until%20lightly%20browned.%3C/p%3E%3Cp%3E2.%20Remove%20from%20oven%20and%20set%20aside.%20After%20it%20cools,%20place%20in%20fridge%20so%20the%20butter%20can%20harden%20the%20mixture%20that%20will%20be%20the%20crust.%3C/p%3E%3Cp%3EFilling:%3C/p%3E%3Cp%3E1.%20In%20a%20food%20processor,%20process%20the%20cottage%20cheese%20until%20smooth%20and%20creamy.%3C/p%3E%3Cp%3E2.%20Next,%20add%20all%20four%20eggs,%20one%20at%20time,%20to%20the%20processor.%3C/p%3E%3Cp%3E3.%20Add%20each%20of%20the%20three%20packages%20of%20cream%20cheese,%20one%20at%20a%20time,%20processing%20in%20between%20each%20addition.%3C/p%3E%3Cp%3E4.%20Once%20it%20is%20all%20combined%20to%20a%20creamy%20smooth%20consistency,%20add%20the%2020%20ounces%20of%20grated%20sharp%20cheddar%20cheese.%20Process%20for%20a%20couple%20of%20minutes,%20or%20until%20cheese%20is%20nicely%20combined%20and%20almost%20smooth.%3C/p%3E%3Cp%3E5.%20Last%20of%20all,%20add%20the%20chopped%20jalapenos%20and%20the%20cumino.%20Process%20until%20combined.%3C/p%3E%3Cp%3E6.%20Take%20cheesecake%20pan%20out%20of%20fridge.%20Very%20carefully%20pour%20the%20mixture%20from%20the%20bowl%20of%20the%20processor,%20being%20careful%20to%20remove%20the%20steel%20blade%20first,%20since%20you%20don't%20want%20it%20to%20go%20splat%20in%20the%20middle%20of%20your%20lovely%20masterpiece.%3C/p%3E%3Cp%3E7.%20To%20keep%20the%20weight%20of%20the%20filling%20from%20from%20disturbing%20the%20crust,%20I%20pour%20the%20mixture%20onto%20a%20rubber%20spatula,%20allowing%20it%20to%20drip%20slowly%20off%20that.%3C/p%3E%3Cp%3E8.%20Place%20cheesecake%20in%20the%20center%20of%20the%20oven%20and%20bake%20for%20one%20%20hour,%20or%20until%20it's%20just%20a%20little%20wobbly.%20You%20don't%20want%20it%20fully%20cooked%20yet.%3C/p%3E%3Cp%3E9.%20While%20the%20cheesecake%20is%20baking,%20you%20can%20whisk%20together%20the%208-oz.%20containers%20of%20sour%20cream%20and%20cheddar-jalapeno%20dip%20until%20thoroughly%20blended.%20Place%20in%20the%20fridge%20until%20the%20cheesecake%20comes%20out%20of%20the%20oven.%3C/p%3E%3Cp%3E10.%20When%20the%20hour%20is%20up,%20remove%20the%20cheesecake%20from%20the%20oven%20and%20top%20with%20the%20refrigerated%20sour%20cream%20and%20cheese%20mixture%20and%20return%20it%20to%20the%20oven%20for%20an%20additional%2020%20to%2025%20minutes.%3C/p%3E%3Cp%3E11.%20When%20you%20take%20the%20cheesecake%20out%20of%20the%20oven%20make%20sure%20that%20you%20can%20place%20it%20in%20a%20draft%20free%20area,%20allowing%20it%20to%20cool%20slowly.%20When%20cooled,%20wrap%20with%20plastic%20wrap%20and%20place%20in%20refrigerator%20for%20at%20least%2010%20to%2012%20hours.%20It%20can%20also%20be%20frozen%20for%20up%20to%202%20weeks%20at%20this%20point.%3C/p%3E%3Cp%3E12.%20After%20allowing%20the%20cake%20to%20chill,%20top%20the%20cheesecake%20with%20the%208%20ounce%20container%20of%20sour%20cream,%20like%20frosting%20on%20a%20cake.%3C/p%3E%3Cp%3E13.%20For%20the%20rest%20of%20the%20topping,%20sprinkle%20the%20chopped%20tomatoes%20first,%20chopped%20green%20onions%20second,%20and%20then%20add%20the%20sliced%20black%20olives.%20Serve%20on%20sturdy%20tortilla%20chips%20(Doritos%20won't%20be%20able%20to%20support%20it.%20You%20need%20a%20good%20thick%20tortilla%20chip.)%3C/p%3E%3Cp%3EIMPORTANT%20NOTE:%20This%20is%20seldom,%20if%20ever,%20served%20like%20a%20normal%20cheesecake,%20although%20I've%20known%20some%20people%20to%20serve%20small%20slices%20of%20it%20on%20a%20salad%20plate%20with%20tortilla%20chips.%20The%20object%20is%20to%20use%20a%20knife%20to%20take%20a%20
