Santa Fe Bean Dip
- A Wonderful Bean Dip you can bring to any party~
- 3 cups dried pinto, pink, or red kidney beans, sorted and rinsed
- 8 cups water
- 1 large yellow onion, chopped
- 4 cloves garlic, minced
- 1-1/2 cups salsa
- 1/2 t salt
- 1/4 t pepper
- 1 t. Sazon, Latin seasoning
- Juice from 1 lime
- 2-4 T hot sauce
- 1-1/2 cups shredded Taco cheese blend
- Extras:
- Sour Cream to taste
- Shredded cheese, for garnish
- Cilantro, for garnish
- Hot Sauce, for garnish
- Tortilla chips
In a large saucepan, combine the beans, the water, onion and garlic. Bring to a boil. Lower the heat and simmer, covered, for 2 to 2 1/2 hours or until beans are very tender. Cool slightly (do not drain)
In a food processor or blender, process bean mixture, half at a time, until smooth. Return bean mixture to the saucepan. Stir in salsa, seasonings, lime juice and hot sauce. Cook, uncovered, over moderate heat for 5 minutes or until desired consistency, stirring constantly. Stir in shredded cheese. Stir until cheese is melted.
Serve with sour cream, shredded cheese, cilantro, hot sauce, and tortilla chips.
