%20and%20it%20is%20available%20online.%3C/p%3E%3Cp%3EDo%20any%20of%20your%20old%20cookbooks%20suddenly%20provide%20a%20wealth%20of%20new%20recipes%20after%20gathering%20dust%20for%20a%20while?%20This%20is%20why%20I%20cannot%20ever%20throw%20out%20or%20get%20rid%20of%20any%20cookbooks.%20You%20just%20never%20know!%20Both%20this%20recipe%20and%20another%20coming%20soon%20came%20from%20The%20King%20Arthur%20Flour%20Cookie%20Companion:%20The%20Essential%20Cookie%20Cookbook%3C/p%3E%3Cp%3E.%20This%20is%20one%20of%20those%20classic,%20classic%20cookbooks%20that%20everyone%20should%20own%20if%20they%20like%20to%20bake%20cookies%20at%20all.%20Not%20any%20photos,%20it%20is%20old%20school%20with%20some%20illustrations,%20and%20the%20selection%20is%20nearly%20encyclopedic%20for%20American%20style%20cookies,%20as%20well%20as%20a%20decent%20selection%20of%20international%20ones.%20And%20almost%2010%20years%20after%20buying%20it%20I%20can%20still%20find%20great%20new%20(to%20me)%20recipes%20in%20it!%3C/p%3E%3Cp%3ESalty%20Sweet%20White%20Chocolate%20Cashew%20Bars%3C/p%3E%3Cp%3ERecipe%20type:%20Dessert%3C/p%3E%3Cp%3ECuisine:%20cookies%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20350%20F.%20Line%20a%209X13%20baking%20pan%20with%20parchment%20paper%20overhanding%20at%20least%202%20opposite%20sides%E2%80%93if%20it%20does%20not%20cover%20the%20pan%20completely%20on%20the%20ends,%20lightly%20grease%20those%20spots.%3C/p%3E%3Cp%3EUsing%20the%20whip%20attachment,%20beat%20your%20eggs%20on%20medium%20high%20speed%20until%20foamy.%20Add%20the%20sugar%20gradually%20on%20medium%20low%20speed,%20then%20scrape%20the%20sides%20and%20add%20the%20salt,%20baking%20powder,%20ground%20vanilla%20beans%20and%20vanilla%20extract.%3C/p%3E%3Cp%3EReturn%20the%20speed%20to%20medium%20high.%20While%20it%20is%20beating,%20add%20the%20butter%20to%20a%20small%20saucepan%20on%20the%20lowest%20heat%20to%20melt.%3C/p%3E%3Cp%3ELet%20the%20eggs%20beat%20until%20lightened%20and%20quite%20thick%20and%20shiny.%20Turn%20off%20the%20mixer%20and%20remove%20the%20attachment.%3C/p%3E%3Cp%3EReturn%20to%20the%20butter.%20When%20it%20is%20starting%20to%20brown,%20add%20half%20of%20the%20chopped%20white%20chocolate.%20Stir%20for%20about%2020%20seconds%20and%20then%20turn%20off%20the%20heat.%20Continue%20stirring.%20If%20the%20chocolate%20does%20not%20melt,%20turn%20the%20heat%20back%20on%20for%20a%20moment%20of%202%20on%20low%E2%80%93be%20careful%20as%20white%20chocolate%20scorches%20easily.%20Stir%20until%20the%20chocolate%20is%20melted%20and%20then%20remove%20completely%20from%20the%20heat.%3C/p%3E%3Cp%3EI%20did%20the%20rest%20by%20hand%20but%20you%20could%20also%20switch%20to%20a%20paddle%20attachment.%20Stir%20the%20flour%20into%20the%20egg%20mixture%20in%202%20additions.%20Stir%20until%20it%20is%20completely%20incorporated%20but%20do%20not%20overbeat.%3C/p%3E%3Cp%3EBeat%20in%20the%20melted%20white%20chocolate%20and%20butter.%20Do%20not%20overbeat,%20but%20do%20beat%20enough%20to%20completely%20incorporate%20the%20chocolate%20and%20butter%E2%80%93the%20butter%20especially%20will%20want%20to%20separate%20at%20first.%3C/p%3E%3Cp%3EWhen%20it%20is%20all%20incorporated,%20scrape%20into%20the%20prepared%20pan%20and%20use%20a%20spatula%20to%20spread%20it%20out%20evenly.%3C/p%3E%3Cp%3ESprinkle%20the%20cashews%20over%20the%20batter%20evenly.%20Then%20sprinkle%20the%20remaining%20white%20chocolate%20chunks%20evenly%20around%20the%20cashews.%3C/p%3E%3Cp%3EBake%20for%2025-30%20minutes,%20or%20until%20the%20bars%20are%20puffed,%20shiny%20and%20golden%20brown.%3C/p%3E%3Cp%3ECool%20completely%20before%20removing%20by%20the%20parchment%20overhang%20and%20then%20slicing%20into%20bars.%3C/p%3E%3Cp%3E3.2.2298%3C/p%3E%3Cp%3EAffiliate%20links%20were%20used%20in%20this%20post,%20but%20only%20to%20link%20to%20items%20I%20would%20be%20linking%20to%20and%20discussing%20anyway.%3C/p%3E%3Cp%3Ebar%20cookies,%3C/p%3E%3Cp%3Ebars,%3C/p%3E%3Cp%3Ecashews,%3C/p%3E%3Cp%3Echocolate,%3C/p%3E%3Cp%3Ecookies,%3C/p%3E%3Cp%3Enuts,%3C/p%3E%3Cp%3Ewhite%20chocolate%3C/p%3E){kind=link}
