- 10 oz good quality white chocolate, divided (make sure cocoa butter is one of the ingredients)
- 6 oz bittersweet chocolate, chopped into chunks
- 1 1/2 cups (189 g) AP flour
- 1/2 t baking powder
- 1/2 t fine grained sea salt
- 10 T (1 1/4 sticks) unsalted butter
- 3/4 cup granulated sugar
- 3 large eggs
- 1 T vanilla
- 3/4 cup coarsely chopped macadamia nuts
- good quality coarse grey sea salt, to taste

,%20eating%20at%20Aziza%20(WOW%20again),%20and%20all%20the%20other%20fabulous%20things%20I%20did%20this%20past%20week.%20%20I%20don%E2%80%99t%20recall%20being%20so%20affected%20by%20jet%20lag%20in%20my%20youth.%20I%20blame%20parenthood.%3C/p%3E%3Cp%3EI%20can%20tell%20you%20these%20brownies%20were%20fabulous,%20a%20little%20on%20the%20cakey%20side.%20%20We%20all%20found%20them%20addictive%E2%80%93and%20I%20would%20call%20the%20nuts%20optional%20if%20you%20are%20wondering%20(in%20which%20case%20cacao%20nibs%20would%20work%20nicely,%20or%20just%20leave%20them%20out).%20%20The%20bittersweet%20chocolate%20was%20especially%20nice.%3C/p%3E%3Cp%3EI%20have%20to%20thank%20my%20dad%20also,%20before%20I%20forget.%20%20Like%20many%20food%20bloggers,%20I%20am%20always%20looking%20for%20white%20or%20off%20white%20plates%20for%20photographing%20my%20food,%20and%20my%20dad%20has%20taken%20to%20looking%20for%20me%20as%20well.%20%20He%20recently%20surprised%20me%20with%20a%20set%20of%20Fiesta%20Ware%20mixing%20bowls%E2%80%93the%20same%20ones%20I%20have%20in%20cobalt%20blue%E2%80%93in%20off%20white.%20%20I%20actually%20used%20it%20for%20this%20recipe,%20as%20you%E2%80%99ll%20see%20below,%20but%20I%20am%20especially%20looking%20forward%20to%20taking%20pictures%20of%20a%20dark%20chocolate%20batter%20or%20dough%20in%20it.%20%20So%20thanks,%20Dad!%3C/p%3E%3Cp%3ESalted%20White%20Chocolate%20Brownies%20with%20Bittersweet%20Chocolate%20Chunks%20and%20Macadamia%20Nuts%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20325%20F.%20%20Line%20a%209-inch%20square%20baking%20pan%20with%20parchment%20paper,%20leaving%20some%20to%20overhang%20the%20sides.%3C/p%3E%3Cp%3EChop%206%20ounces%20of%20the%20white%20chocolate%20finely%20and%20set%20aside.%20%20Chop%20the%20remaining%204%20ounces%20into%20chunks%20and%20set%20those%20aside.%3C/p%3E%3Cp%3EWhisk%20together%20the%20flour,%20baking%20powder%20and%20salt.%20%20Set%20aside.%3C/p%3E%3Cp%3EMelt%20the%20butter%20in%20a%20small%20saucepan%20over%20low%20heat%E2%80%93do%20not%20let%20it%20brown.%20%20When%20it%20is%20all%20melted,%20add%20the%20white%20chocolate.%20%20Turn%20off%20the%20heat%20and%20let%20it%20sit.%3C/p%3E%3Cp%3EUse%20an%20electric%20mixer%20to%20beat%20the%20eggs,%20sugar%20and%20vanilla%20until%20thick,%20pale%20and%20frothy,%20about%205%20minutes.%3C/p%3E%3Cp%3EMix%20the%20white%20chocolate%20and%20butter%E2%80%93if%20some%20of%20the%20white%20chocolate%20remains%20unmelted,%20turn%20the%20heat%20on%20low%20and%20mix%20until%20it%20is.%20%20Let%20it%20cool%20a%20few%20minutes.%20and%20then%20slowly%20drizzle%20it%20unto%20the%20egg%20mixture%20with%20the%20electric%20mixer%20running%20on%20low.%20%20Scrape%20the%20rest%20of%20the%20butter%20and%20white%20chocolate%20into%20the%20egg,%20and%20then%20beat%20on%20medium%20speed%20to%20blend,%20about%2020%20seconds.%3C/p%3E%3Cp%3EAdd%20the%20flour%20mixture%20to%20the%20bowl%20and%20mix%20on%20low%20speed%20just%20until%20incorporated.%20%20Dump%20in%20the%20nuts%20and%20chocolate%20chunks%20(bittersweet%20and%20white),%20and%20fold%20them%20into%20the%20batter.%3C/p%3E%3Cp%3EScrape%20the%20batter%20into%20the%20prepared%20pan.%20%20Sprinkle%20the%20top%20evenly%20with%20coarse%20sea%20salt.%20%20Bake%2030-35%20minutes,%20until%20a%20cake%20tester%20inserted%20into%20the%20center%20of%20the%20pan%20comes%20out%20with%20a%20few%20moist%20crumbs%20attached.%20%20Let%20them%20cool%20completely%20in%20the%20pan.%3C/p%3E%3Cp%3ERemove%20the%20brownies%20by%20the%20parchment%20overhang%20and%20slice%20them%20into%20squares.%3C/p%3E){kind=link}
