- 1/4 t salt
- 2/3 cup AP flour
- 1/2 cup peanut butter chips
- Top (frosting) layer:
- 1/4 cup room temperature unsalted butter
- 2 T creamy, not natural peanut butter, to taste
- 2 cups confectionersâ sugar
- 1 T milk (plus more to taste)
- 1/2 vanilla
- pinch of salt
- coarse sea salt for sprinkling
- salted peanuts, optional

,%20so%20the%20kids%20already%20had%20gobs%20of%20candy%20when%20I%20made%20these,%20and%20as%20a%20result%20I%20never%20could%20get%20them%20to%20really%20even%20give%20this%20dessert%20a%20chance.%20Which%20is%20a%20shame%20because%20they%20are%20incredible.%20My%20husband%20loved%20them%20but%20found%20them%20a%20tad%20rich.%20I%20however%20don%E2%80%99t%20really%20have%20a%20%E2%80%9Ctoo%20rich%E2%80%9D%20setting,%20and%20thought%20these%20were%20decadent%20indulgence%20at%20its%20finest.%20A%20fellow%20mom%20tried%20them%20and%20pretty%20much%20groaned%20happily%20the%20whole%20time%20she%20ate%20one.%3C/p%3E%3Cp%3EI%20got%20the%20recipe%20from%20one%20of%20those%20cookie%20magazines%20that%20are%20released%20during%20the%20holidays%E2%80%93but%20I%20don%E2%80%99t%20find%20these%20particularly%20seasonal.%20I%20think%20peanut%20butter%20and%20chocolate%20can%20be%20enjoyed%20anytime%20it%20strikes%20your%20fancy.%20Because%20they%20need%20to%20be%20stored%20in%20the%20fridge,%20I%20guess%20I%20would%20not%20recommend%20serving%20them%20when%20your%20house%20is%20really%20hot%20or%20at%20a%20summer%20picnic,%20much%20like%20any%20other%20buttercream-topped%20dessert.%20But%20even%20then%20you%20could%20eat%20them%20straight%20out%20of%20the%20fridge/cooler.%3C/p%3E%3Cp%3ESalted%20Peanutty%20Brownie%20Bites%3C/p%3E%3Cp%3EAdapted%20from%20Better%20Homes%20and%20Gardens%20Ultimate%20Cookies%20and%20Bars%3C/p%3E%3Cp%3EBottom%20Layer:%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20350%20F.%20Line%20the%20bottom%20of%20a%207X11(recipe%20calls%20for)%20or%209X13%20(I%20used)%20pan%20with%20parchment%20paper.%20Set%20aside.%3C/p%3E%3Cp%3EMake%20the%20crust%20by%20placing%20the%20peanuts%20in%20a%20food%20processor;%20pulse%20until%20coarsely%20chopped%20and%20add%20the%20graham%20crackers%20and%20pinch%20of%20salt.%20Process%20until%20it%20is%20all%20fine%20crumbs.%20Stir%20in%20the%20melted%201/2%20cup%20butter%20and%20pat%20into%20parchment-lined%20pan.%20Press%20firmly%20and%20then%20bake%20for%205%20minutes.%20Set%20aside%20to%20cool.%20Leave%20the%20oven%20on.%3C/p%3E%3Cp%3EMelt%20the%20chocolate%20and%201/2%20cup%20butter%20in%20the%20microwave%20on%2050%25%20power%20in%2045%20second%20increments.%20Stir%20until%20smooth.%20Add%20the%20sugar,%201/4%20teaspoon%20salt,%20eggs%20and%20vanilla,%20and%20stir%20just%20until%20combined.%20Stir%20in%20the%20flour%20and%20peanut%20butter%20chips.%20Spread%20this%20brownie%20filling%20evenly%20over%20the%20baked%20crust.%20Bake%20for%2020%20more%20minutes,%20until%20the%20brownie%20layer%20is%20cooked.%20Set%20aside%20to%20cool%20completely.%3C/p%3E%3Cp%3EMake%20the%20frosting%20by%20beating%20together%202%20tablespoons%20of%20the%20peanut%20butter%20with%201/4%20cup%20of%20softened%20butter.%20Gradually%20beat%20in%201%20cup%20of%20powdered%20sugar.%20Add%201%20tablespoon%20of%20milk,%20the%20pinch%20of%20salt%20and%20the%20vanilla.%20Gradually%20beat%20in%20an%20additional%20cup%20of%20powdered%20sugar.%20Add%20milk%20and%20peanut%20butter%20to%20your%20desired%20consistency%20and%20taste.%20You%20might%20also%20want%20more%20salt,%20but%20remember%20you%20will%20be%20sprinkling%20the%20bars%20with%20coarse%20salt.%3C/p%3E%3Cp%3ESpread%20the%20frosting%20over%20the%20cooled%20brownie%20layer.%20Sprinkle%20with%20coarse%20sea%20salt.%20Remove%20in%20one%20large%20slab%20using%20the%20parchment%20paper.%20Slice%20into%20small%20bars%20(these%20are%20very%20rich,%20small%20is%20the%20way%20to%20go).%20Press%20a%20few%20peanuts%20into%20each%20bar%20if%20desired%20(I%20did%20some%20but%20decided%20I%20liked%20them%20better%20without,%20I%20found%20the%20peanuts%20distracting).%20They%20keep%20well%20in%20the%20refrigerator.%3C/p%3E){kind=link}
