Salted Egg Salad

Asian style veg side dish; blanched veggies, spring onion and chillies, dressed in crumbled salted eggs.

Ингредиенты

  • 2 boiled salted eggs - remove shells and lightly crumbled
  • 150g snow peas (remove strings on both sides)
  • 85g carrot - sliced
  • 1 (about 60g) tomato - sliced
  • 1 red chilli - remove seeds and sliced thinly
  • 2 stalks spring onion - sliced thinly
  • Salt (only if needed) and pepper to taste

Инструкции

  1. Blanch snow peas and sliced carrots in boiling water to soften (depends on a texture you prefer).
  2. Plunged in ice water to stop the cooking process.
  3. Drain off and add into a bowl.
  4. Add all the other ingredients and toss.
