%20night%20of%20Hanukkah%202014.%20I%20made%20this%20Salted%20Chocolate%20Caramel%20Tart%20to%20stand%20in%20place%20of%20the%20more%20traditional%20Hanukkah%20gold%20coin%20chocolate%20gelt.%20It%E2%80%99s%20true,%20I%E2%80%99m%20not%20Jewish.%20But%20I%20feel%20happy%20to%20send%20you%20this%20greeting%20no%20matter%20your%20religious%20associations.%20Because%20around%20my%20house%20we%20like%20to%20say%20I%20am%20Jewish%20adjacent,%20that%E2%80%99s%20because%20my%20partner%20is%20Sephardic.%3C/p%3E%3Cp%3ELike%20all%20holidays%20Hanukkah%20has%20its%20traditions%20and%20expectations.%20Which%20we%20happily%20meld%20into%20our%20other%20religious%20and%20non-religious%20holiday%20activities.%3C/p%3E%3Cp%3EI%E2%80%99ve%20grown%20to%20love%20the%20lighting%20of%20the%20menorah%20each%20year,%20and%20at%20my%20age%20a%20well-placed%20yarmulke%20could%20be%20a%20good%20thing.%20However,%20I%20have%20trouble%20getting%20excited%20about%20Hanukkah%20gelt.%20These%20foil-wrapped%20chocolate%20candies%20usually%20come%20in%20plastic-mesh%20bags%20and%20jangle%20joyously%20at%20the%20end%20of%20the%20checkout%20aisle.%20So%20despite%20my%20misgivings,%20I%20almost%20always%20buy%20them%20on%20impulse.%20Partly%20because%20I%E2%80%99m%20usually%20staring%20at%20that%20box%20of%20candy%20canes%20I%E2%80%99ve%20begrudgingly%20thrown%20in%20my%20cart%20moments%20earlier.%20The%20truth%20is,%20like%20candy%20canes%20at%20Christmas,%20golden%20gelt%20is%20one%20of%20those%20Hanukkah%20traditions%20that%20have%20become%20expectations.%20Still,%20I%20have%20to%20admit%20I%20think%20these%20little%20candies%20taste%20more%20like%20leftover%20wax%20scraped%20out%20of%20the%20menorah,%20than%20any%20kind%20of%20chocolate%20I%E2%80%99d%20bother%20to%20eat.%3C/p%3E%3Cp%3EWhich%20means%20at%20my%20house%20the%20Hanukkah%20gelt%20usually%20remains%20wrapped%20in%20its%20gold%20foil,%20sitting%20on%20the%20holiday%20table%20long%20after%20the%20eight%20days%20are%20done.%20It%20seems%20silly%20to%20spend%20good%20gelt%20on%20gelt%20that%20can%E2%80%99t%20be%20enjoyed.%3C/p%3E%3Cp%3ESalted%20Chocolate%20Caramel%20Tart%3C/p%3E%3Cp%3EWell%20this%20year%20I%E2%80%99ve%20decided%20to%20tackle%20the%20tradition%20of%20gelt%20in%20the%20form%20of%20a%20Salted%20Chocolate%20Caramel%20Tart.%20I%20probably%20should%20have%20made%20this%20a%20round%20tart.%20A%20round%20Salted%20Chocolate%20Caramel%20Tart%20looks%20a%20lot%20more%20like%20a%20coin%20than%20the%20rectangular%20tart%20you%20see%20in%20the%20photo%20to%20the%20right.%20Well%20if%20this%20new%20kind%20of%20gelt%20catches%20on%20in%20my%20house%20maybe%20next%20year%20I%E2%80%99ll%20make%20a%20round%20gelt%20Salted%20Chocolate%20Caramel%20Tart.%20It%20could%20become%20my%20nod%20to%20the%20past,%20with%20both%20feet%20in%20the%20present.%20GREG%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3EPrepare%20the%20crust:%20Preheat%20oven%20to%20350%20degrees.%3C/p%3E%3Cp%3EMelt%20the%2014%20tablespoons%20butter%20in%20a%20small%20saucepan.%3C/p%3E%3Cp%3EIn%20a%20food%20processor,%20pulse%20digestive%20biscuits,%20granulated%20sugar,%20and%20kosher%20salt%20until%20finely%20ground.%20Add%206%20tablespoons%20of%20the%20melted%20butter;%20pulse%20until%20combined.%3C/p%3E%3Cp%3EFirmly%20press%20crumb%20mixture%20into%20bottom%20and%20up%20sides%20of%2012x4x1-inch%20rectangular%20or%20an%209-inch%20round%20fluted%20tart%20pan%20with%20removable%20bottom.%20Bake%20until%20crust%20is%20dry%20and%20set,%20about%2012%20minutes.%20Let%20cool%20completely%20on%20a%20wire%20rack.%3C/p%3E%3Cp%3EMake%20the%20caramel:%20Add%20brown%20sugar%20to%20the%20saucepan%20containing%20remaining%208%20tablespoons%20melted%20butter;%20set%20the%20pan%20over%20medium%20heat.%20Whisk%20the%20mixture%20constantly%20until%20it%20begins%20to%20boil.%20Remove%20from%20heat%20and%20slowly%20whisk%20in%20%C2%BC%20cup%20heavy%20cream.%20Set%20the%20caramel%20aside%20to%20cool%20about%2015%20minutes.%20Then%20before%20it%20gets%20too%20cool,%20pour%20the%20caramel%20into%20the%20prepared%20tart%20shell.%20Place%20in%20the%20freezer%20for%2015%20minutes%20to%20become%20firm,%20but%20not%20frozen.%3C/p%3E%3Cp%3EMake%20the%20ganache:%20Meanwhile,%20place%20chocolate%20in%20a%20large%20mixing%20bowl.%20In%20a%20small%20saucepan,%20bring%20remaining%201-cup%20cream%20to%20a%20boil.%20Pour%20hot%20cream,%20through%20a%20clean%20sieve,%20over%20chopped%20chocolate.%20Stir%20until%20smooth%20and%20creamy%20in%20texture.%20Mix%20in%20vanilla.%3C/p%3E%3Cp%3EPour%20chocolate%20mixture%20through%20a%20clean%20sieve%20into%20center%20of%20cooled%20tart%20shell%20(this%20will%20improve%20the%20texture).%20Gently%20tip%20the%20tart%20pan%20to%20evenly%20cover%20the%20caramel%20with%20ganache%20if%20necessary.%20Let%20stand%20until%20set,%20about%202%20hours,%20or%20chill%20for%201%20hour.%3C/p%3E%3Cp%3EBefore%20serving,%20sprinkle%20the%20top%20with%20flaky%20sea%20salt%20to%20taste.%3C/p%3E%3Cp%3EShare%3C/p%3E){kind=
