Salted Butterscotch Coffee Cake ~ Moist Butterscotch Cake with a Cinnamon Swirl and Salted Butterscotch Glaze!

Today we are celebrating Cathy from Lemon Tree Dwelling‘s upcoming bundle of joy’s arrival!

Seems like we have a lot of babies coming in blog land lately! We just celebrated Lisa over at Wine & Glue‘s Baby Shower and now we are celebrating Cathy’s!

Want to know something interesting? Cathy and Lisa are besties in real life and they just happen to be due a few weeks apart and this isn’t the first time it’s happened. Pretty cool huh?

I love reading about her bustling household that is brimming over with three girls and a lot of pink!

Do we dare hope that she’s blessed with a baby boy this time? I’ll hope, but really as all moms I’m pretty sure she is just praying for a healthy baby!

I made this amazing Salted Butterscotch Coffee Cake for a dessert when I had our friends over and wow was it good! I was a bit hesitant because butterscotch is one of those “iffy” flavors. You usally hate it or love it. No real in between. My husband leans towards the hating it, but he gobbled this up and I had rave reviews!

The outside of it is this amazing crunch caramelized coating, the inside is a soft cake and swirled with cinnamon. Plus it’s drizzled in a Salted Butterscotch frosting!

Instructions

Preheat oven to 350 degrees. Grease bundt pan.

Mix together the cake mix, eggs, pudding, vegetable oil and water until well combined. Stir in butterscotch chips. Pour half of the mixture into prepared pan.

Mix together the brown sugar and cinnamon. Sprinkle over cake mixture in pan. Top with remaining cake mixture.

Bake for 50-60 minutes o until the cake tests done. Cool.

In a small bowl whisk together powdered sugar, ice cream topping and milk. You want this fairly thick so it doesn't run off the cake. drizzle over cake.
