  • 1 med Tomato (6 ounces)
  • 4 Tbsp. Finely minced white onion
  • 2 Tbsp. Roughly minced fresh coriander
  • 3 x Chiles seranos, finely minced, with seeds
  • 1/2 tsp Salt, or possibly to taste
  • 1/3 c. Cool water

  1. Chop the unskinned tomato and mix with the rest of the ingredients.
  2. Although this can be made up to three hrs ahead, it is best made at almost the last minute, for it soon loses its crispness and the coriander it's sharp flavor.
