Salsa Fresca

I am a tomato snob.

I love a tomato just as well as the next guy except I only like the kind that is homegrown. That is why when I order a sandwich I always ask for no tomato. The hothouse variety you see in the grocery store have no taste at all.

I was dreaming of some noshable nibbles for Superbowl and thought of Salsa Fresca.

Then I thought no, I dont have any homegrown tomatoes. I did however have some vine ripen ones that the Hubster bought at the grocery store. So on a whim I decided to make this.

Well, you will be happy to hear that I am no longer a tomato snob. Those vine ripen tomatoes have a bit more flavor than the hothouse variety and are pretty tasty to boot.

I made this a few hours before the game and to be honest we ate it before the game even began. It was so wonderfully refreshing that it reminded me of Summer.

I would have thought it was summer if it wasn’t for the 10 inches of snow outside. I am not sure how the snow happened considering I live along the coast of Virginia. We never get snow. How is it that we got hit twice with the white fluffy stuff in the same month no doubt. Darn near closed up the whole area. Both times.

Now they say that ground hog saw its shadow and it is 6 more weeks of winter? I think we should make some ground hog stew. What do y’all think?

Salsa Fresca

Ingredients:

Directions:

In a Medium bowl combine tomato, onion, pepper, cilantro, garlic lime oil and salt together. Toss thoroughly. Let stand 15 minutes before serving.
