- Saute/fry the onion in the oil till soft. Add in the carrots and water.
- Bring to a boil, reduce the heat, and simmer till the carrots are soft. Allow the mix to cold to room temperature.
- Add in the Habaneros and lime juice to the carrot mix. Place the mix in a blender and puree till smooth.
- This sauce will keep for weeks in the refrigerator.
