- Mix 1 1/2 c. bread crumbs, parsley, mayonnaise, Dijon mustard, scallions, egg and salmon. Cover and chill for 15 min to hard. Mix 1/2 c. (remaining) bread crumbs, paprika and Old Bay. Shape salmon into 4 cakes, about 3/4 inch thick, coat with bread crumb mix. Pan fry in butter, turning till golden brown and heated (about 3-4 min each side). Serve with Dijon Mayonnaise (below).
