I love how the word rustic conjures up images so unique to everyone. I love a rustic bread.
Bread and butter. Bread is the most incredible food ever. Really! Think about it. So many textures, flavors, and techniques.
But, I am also the most impatient cook in the world. I don’t have the patience to make bread. Don’t tell me to buy a bread maker either. Been there done that. Loved the appliance, but hated storing it and hauling it out to bake bread.
Since I haven’t mastered the art of bread making yet, I am experimenting with quick methods of baking bread.
This one is quick. It’s dense yet is a perfect bread to have with olive oil and balsamic vinegar.
Rustic No Yeast Quick Bread

Serves: 20
- ⅓ cup of extra virgin olive oil
- 3 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt, preferably sea salt
- 1 cup of warm water
- Pre heat the oven to 375
- Spray an oven proof dish or 9 inch skillet with non-stick spray
Put the flour, baking powder, and salt in a food processor.
Turn on the machine and slowly add the olive oil and most of the water.
Process for 30 seconds.
If it doesn’t come together, add remaining water a tablespoon at a time, processing for 5 seconds each time. If you want to add herbs, cheese, whatever, to the dough, do it now.
Put the dough into the pan and flatten it until the dough fits to the edges. Flip and press again. Cover tightly with foil and bake.
After 20 minutes, remove the foil and sprinkle the top with coarse seat salt and herbs (if you like).
Bake for another 20 minutes.
The top will be golden and it will spring back when touched.

I find that this bread is a great dipping bread. Olive oil and balsamic vinegar with a bit of salt and pepper is my favorite.
