.%20There%20was%20one%20thing%20my%20grandmother%20was%20famous%20for%20in%20my%20family%20and%20it%20was%20her%20pies.%20She%20had%20a%20knack%20for%20pie%20crusts.%20She%20had%20such%20a%20way%20in%20the%20kitchen.%20Everything%20I%20know%20about%20food%20and%20cooking%20comes%20from%20my%20grandmother%20and%20my%20mother.%20The%20way%20they%20cooked%20and%20baked,%20created%20menus%20and%20gathered%20friends%20around%20the%20table.%3C/p%3E%3Cp%3EHer%20apple%20pie%20was%20something%20not%20to%20be%20missed.%20A%20crispy%20buttery%20and%20slightly%20sweet%20crust,%20a%20layer%20of%20vanilla%20bean%20studded%20applesauce%20and%20plenty%20of%20apples%20slices%20on%20top,%20with%20a%20touch%20more%20butter%20and%20sugar%20on%20top.%20A%20dollop%20of%20creme%20fraiche,%20served%20room%20temperature%20and%20you%20would%20find%20silence%20around%20the%20dinner%20table,%20as%20well%20as%20plenty%20of%20smiles%20and%20happy%20bellies.%3C/p%3E%3Cp%3EToday%20looks%20like%20an%20odd%20day%20in%20the%20weather%20pattern%20for%20the%20coming%20days,%20one%20with%20a%20light%20breeze,%20bright%20blue%20skies%20and%20a%20little%20cold%20in%20the%20air.%20I%20am%20taking%20full%20opportunity%20by%20cranking%20on%20the%20oven%20and%20making%20pie.%20A%20hot%20cup%20of%20tea%20and%20I%20am%20getting%20in%20the%20mood%20for%20Fall.%20Alabama%20is%20really%20beautiful%20in%20the%20fall.%20I%20didn't%20expected%20it%20last%20year%20(Charleston%20has%20two%20seasons,%20hot%20and%20hotter!)%20and%20I%20am%20really%20looking%20forward%20to%20seeing%20the%20seasonal%20color%20of%20nature%20in%20all%20its%20glory.%20Orchards%20are%20full%20and%20giving%20of%20all%20kinds%20of%20gorgeous%20apples,%20market%20stands%20abound%20with%20all%20varieties%20of%20squash%20imaginable.%3C/p%3E%3Cp%3EI%20usually%20do%20not%20veer%20far%20away%20from%20the%20way%20Mamie%20Paulette%20used%20to%20make%20her%20apple%20tart.%20This%20time,%20however,%20I%20did%20by%20adding%20hemp%20seeds%20instead%20of%20nuts%20to%20the%20crumb%20topping%20I%20usually%20put%20on%20my%20tart.%20It%20added%20a%20nuttiness%20without%20being%20overpowering.%20I%20also%20skipped%20the%20applesauce%20layer%20Mamie%20traditionally%20used%20in%20hers.%20Not%20being%20lazy,%20truth%20is,%20we%20ate%20most%20of%20it%20before%20there%20was%20enough%20left%20for%20the%20tart.%20I'll%20have%20to%20tell%20you%20about%20it%20soon.%20This%20thing%20will%20make%20you%20swoon,%20get%20a%20skip%20in%20your%20step.%20It's%20a%20daily%20dose%20of%20happiness%20in%20itself.%3C/p%3E%3Cp%3EAs%20soon%20as%20the%20tart%20came%20out%20of%20the%20oven,%20it%20was%20like%20Mamie%20Paulette%20was%20here%20again.%20Her%20big%20warm%20heart,%20sharp%20wit%20and%20larger%20than%20life%20joy%20for%20life.%3C/p%3E%3Cp%3EA%20balm%20for%20the%20heart,%20for%20the%20cook%20and%20for%20the%20friends%20gathering%20at%20our%20table.%3C/p%3E%3Cp%3EApple%20Tarte%20With%20Hemp%20Seed%20Crumb%20Topping:%3C/p%3E%3Cp%3EServes%206%20to%208%3C/p%3E%3Cp%3EFor%20the%20crust:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EFor%20the%20crust:In%20bowl%20of%20electric%20mixer%20fitted%20with%20paddle%20attachment,%20%20and%20salt%20on%20medium%20speed%20until%20well-combined.%20Slowly%20add%20sugar%20and%20flour%20and%20mix%20well.%20Add%20the%20egg%20yolk%20/milk%20mixture%20and%20mix%20until%20incorporated.%20Shape%20dough%20into%20a%20ball%20and%20flatten%20into%20a%20disc.%20Wrap%20with%20plastic%20wrap%20and%20refrigerate%20for%20two%20hours%20or%20overnight.%3C/p%3E%3Cp%3EPlace%20the%20dough%20in%20between%20two%20sheets%20of%20plastic%20wrap%20or%20parchment%20paper%20and%20roll%20it%20out%20to%20about%201/4-inch%20thick%20round.%3C/p%3E%3Cp%3EPlace%20in%20a%209-inch%20tart%20pan,%20trim%20the%20edges.%20Prick%20the%20dough%20with%20a%20fork%20and%20refrigerate%2030%20minutes%20up%20to%202%20hours.%20(you%20can%20even%20freeze%20the%20dough%20in%20the%20tart%20pan%20at%20this%20point%20and%20let%20thaw%20in%20the%20fridge%20overnight%20when%20you%20are%20ready).%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350F%20and%20position%20a%20rack%20in%20the%20middle.%3C/p%3E%3Cp%3EFor%20the%20apples:%3C/p%3E%3Cp%3EIn%20a%20small%20bowl,%20rub%20together%20the%20sugar%20and%20lemon%20zest%20so%20that%20the%20citrus%20natural%20oils%20can%20flavor%20the%20sugar.%3C/p%3E%3Cp%3Epeel,%20core%20and%20thinly%20slice%20the%20apples.%20%20Arrange%20loosely%20in%20the%20tart%20pan.%3C/p%3E%3Cp%3EPrepare%20the%20crisp%20topping:%3C/p%3E%3Cp%3EIn%20a%20medium%20bowl,%20combine%20with%20your%20fingertips%20or%20a%20pastry%20blender%20the%20flour,%20sugar,%20butter%20and%20hemp%20seeds%20until%20the%20mixture%20resembles%20coarse%20sand.%3C/p%3E%3Cp%3ESpread%20over%20the%20apple.%3C/p%3E%3Cp%3EBake%20tart%20for%2040%20to%2050%20minutes.%20Let%20cool%20to%20room%20temp%20and%20serve%20with%20generous%20dollops%20of%20creme%20fraiche%20or%20whipped%20cream.%3C/p%3E){kind=link}
