30 cloves garlic 1/2 c. extra virgin olive oil 1/4 c. lemon juice

4 T white wine vinegar 1/2 teaspoon oregano Salt and pepper to taste

1. Blanch the cloves of garlic in boiling water for 5 min then plunge into cold water. Drain and fold in everything else. Allow to set for 9 days before serving.
