While staring at my laptop in my makeshift cubicle that I hijacked (a story for another day) I was daydreaming about that 12 pack of harvest beer that I recently purchased. You know the pack that I bought for the Spiked Challenge I entered the other day.
It was a Harvest Collection variety pack. I wasn’t going to drink all that beer. Really, I wasn’t. Although, the way things were transpiring at work I should have. Nope, I had my grand plans to cook with it. But, while I was daydreaming about that 12-pack, my friend sent me this cartoon.
Ruby Slippers. I had two bottles of Ruby Mild Ale and now I was chomping at the bit to make the drive home and create this recipe for Ruby Mild Ale Chicken. And drink while I cooked.
Ruby Mild Ale Chicken

Serves: 4
- 1 pound boneless chicken breasts; cut into strips
- ½ tablespoon olive oil
- 1 garlic clove; crushed
- ⅛ teaspoon ground ginger
- ¼ teaspoon crushed red pepper flakes
- ⅛ cup Ruby Mild Ale (or apple juice)
- ⅛ cup brown sugar
- ½ Tablespoon ketchup
- ½ Tablespoon Siracha sauce
- ½ tablespoon apple cider vinegar
- ¼ cup water
- 2 Tablespoons soy sauce
Heat oil in a large skillet.
Add chicken and cook until lightly browned.
Remove chicken.
Add remaining ingredients, heating over medium heat until well blended and dissolved.
Add chicken and bring to a hard boil.
Reduce heat and simmer for 10 minutes uncovered.
5 PP per serving of chicken
add 5 PP per 1 cup of steamed rice

Hoping for the best and I lucked out. That was one spicy chicken dish and I loved it. This girl is on fire. Oh and the rest of the beer tasted really good too.
Morale of the story. Daydreaming can be a great distraction to an otherwise extremely stressful day.
And the best part is that beer can make it better. well sorta.
