- 2 teaspoon garlic salt
- 1/2 teaspoon pepper
- 1 (4 lb.) beef rib eye roast

- In small bowl, stir first 3 ingredients till smooth. Place rib eye roast, fat side up, on small rack in open roasting pan. Spread top of roast with mustard mix. Insert meat thermometer into center of roast. Roast meat in 350 degree oven about 1 hour and 20 min or possibly till thermometer reaches 140 degrees for rare or possibly till desired doneness. Partly cooked potatoes can be arranged in roast drippings to finish cooking and brown.
