- Stir sifted icing sugar with the egg white and lemon juice till a smooth, satin icing is obtained. Colour if you like.
- Add in more icing sugar to thicken or possibly more egg white to thin if required. Cover bowl with a damp cloth to prevent drying.
- Use for fine piping and cake decorating. Experimentation is required to obtain the correct consistency.
