Ooey and Gooey, these Rocky Road Mini Loafs are even better than candy.
Rocky Road Mini Loafs
- 1¾ cups all-purpose flour
- teaspoon baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- ½ cup unsalted butter, softened
- ½ cup brown sugar
- 2 eggs
- ½ teaspoon vanilla bean paste
- 2 tablespoons plain Greek Yogurt (Like Chobani)
- ¼ cup chopped walnuts
- ½ cup miniature marshmallows
- ½ cup semisweet mini chocolate chips
Preheat oven to 325°F.
Prepare your mini loaf pans by spraying with a nonstick baking spray.
In a medium bowl, whisk together flour, baking powder, baking soda and salt. Set aside.
In a large bowl, beat together butter and sugar until light and fluffy.
Add one egg.
Add the vanilla then the last egg.
Add in the flour mixture with the yogurt, just until evenly moistened.
Gently fold in the walnuts, marshmallows and chocolate chips.
Spread batter into prepared pans and bake in preheated oven for 25 minutes or until a tester inserted in the center of the loaf comes out clean.
Move to a wire rack and cool in pan for 30 minutes then turn loafs out onto wire rack and cool completely.

You know that feeling you get when your finished product is everything and more? Yeah, that’s what happened when I was done making these addicting mini loaves.My first slice was when they were still a bit warm. I am telling you that it was out of this world. As they say, amaze balls.
I kid you not when I say they are better than candy. Oh Lord, help me. Luckily I am giving these loaves away.
