1 pound bag of sweet mini pepper, halved 1 tomato, quartered 1½ teaspoons olive oil coarse sea salt and fresh ground pepper to taste 1 head garlic, top cut off

Preheat oven to 325 degrees F. Place the peppers and tomatoes on a baking sheet. Sprinkle with salt, pepper and olive oil Remove from oven and let cool. Take the garlic and squeeze to expel the paste into your blender. Add the peppers and tomatoes Blend, but leave a few tiny chunks for texture Refrigerate in a jar for up to two weeks. 3.2.2704
