A few weeks ago I picked up a package of mandarin oranges at the grocery store because I hadn't had them in a while and thought they sounded good. A few days after that I started thinking about ways I could bake with the oranges to bring out their sweet flavor in the best possible way. I decided that roasting them was something I don't remember seeing before and it would showcase their juicyness. I paired these with angel food cake because I didn't want a cake that was to heavy. I was thinking about a dessert that was light and refreshing while still reminding me of autumn.

One of the things that I love about this recipe is that it's so simple but delicious. I used three oranges but you can use as many as you want. This recipe could easily be doubled or even tripled. I chose angel food cake because I love the angel food cupcakes I have made before, but if you want to pair them with a chocolate cake or yellow cake then I'm sure that would also be delicious. I also prefer a fairly plain cake with these oranges so that their flavor isn't overwhelmed by the flavor of the cake.

Roasted, Spiced Oranges on Angel Food Cupcakes

Makes 9-10 cupcakes

Ingredients:

Directions:

1. Preheat the oven to 350F. In a small bowl, stir together the light brown sugar, vanilla extract, cinnamon, and cloves until smooth.

2. Peel the oranges and pull apart into segments. Gently stir the segments into the brown sugar mixture, stir until coated.

3. Pour into a loaf pan or small baking dish. Bake for 18-20 minutes, stirring halfway through.

4. Divide the oranges over the cupcakes or slices of cake. Serve warm.
