%20a%20few%20purple%20carrots%20(see%20my%20last%20explanation)%20an%20acorn%20squash,%20a%20small%20to%20medium%20sized%20white%20turnip.a%20bunch%20of%20fresh%20thyme%20and%20a%20few%20other%20odds%20and%20sods%20.%20.%20.%20most%20not%20in%20quantities%20large%20enough%20to%20cook%20any%20one%20thing,%20with%20the%20exception%20of%20the%20orange%20carrots.%3C/p%3E%3Cp%3EI%20peeled%20and%20chopped%20them%20into%20large%20pieces%20and%20added%20a%20chopped%20red%20onion%20and%20then%20I%20roasted%20them%20in%20a%20hot%20oven%20along%20with%20some%20garlic,%20a%20good%20grinding%20of%20black%20pepper,%20a%20few%20sea%20salt%20flakes,%20some%20olive%20oil%20and%20a%20few%20springs%20of%20that%20fresh%20thyme%20.%20.%20.%3C/p%3E%3Cp%3EThen%20.%20.%20.%20I%20roasted%20them%20in%20that%20hot%20oven%20for%20about%2020%20minutes,%20stirring%20them%20now%20and%20then%20%20.%20.%20.%20until%20they%20were%20all%20nice%20and%20cooked%20through%20and%20beginning%20to%20caramelize.%20%20There%20is%20nothing%20so%20tasty%20as%20caramelized%20oven%20roasted%20root%20vegetables%20.%20.%20.%20and%20while%20they%20were%20making%20their%20magic,%20I%20cooked%20some%20wheatberries%20in%20some%20vegetable%20stock%20until%20tender%20.%20.%20.%3C/p%3E%3Cp%3EAnd%20then%20.%20.%20.%20I%20tossed%20them%20all%20together%20in%20a%20bowl%20.%20.%20.%20the%20cooked%20wheatberries%20and%20the%20roasted%20vegetables%20and%20I%20added%20a%20deliciously%20tangy%20lemon%20vinaigrette%20.%20.%20.%20made%20with%20a%20couple%20of%20the%20lemons%20from%20my%20fruit%20bowl%20on%20the%20counter%20.%20.%20.%3C/p%3E%3Cp%3EAfter%20that%20I%20added%20a%20few%20broken%20up%20and%20toasted%20English%20Walnuts%20.%20.%20.%20again%20leftover%20from%20our%20Christmas%20Celebrations%20.%20.%20.%20and%20a%20handful%20of%20dried%20cranberries,%20just%20for%20some%20chewy%20sweetness%20and%20texture%20.%20.%20.%20and%20I%20mixed,%20them%20all%20together,%20yes%20I%20did,%20and%20sprinkled%20some%20flat%20leaf%20parsley%20over%20top,%20leftover%20again,%20from%20Christmas%20.%20.%20.%20and%20then%20.%20.%20.%20%20do%20you%20know%20what%20we%20did???%3C/p%3E%3Cp%3EWe%20ate%20it.%20%20%20With%20large%20lumps%20of%20buttered%20crusty%20bread%20and%20some%20leftover%20stilton%20crumbled%20over%20top.%20%20%20And%20do%20you%20know%20what%20else???%3C/p%3E%3Cp%3EIt%20was%20very,%20very%20.%20.%20.%20very%20good.%3C/p%3E%3Cp%3E*Roasted%20Roots%20and%20Wheatberries%20with%20a%20Lemon%20Vinaigrette*%3C/p%3E%3Cp%3EServes%206%20to%208%3C/p%3E%3Cp%3EI%3C/p%3E%3Cp%3Elike%20to%20cook%20my%20wheatberries%20in%20vegetable%20stock%20to%20give%20them%20more%3C/p%3E%3Cp%3Eflavour.%20%20%20You%20get%20the%20nutty%20chewiness%20of%20the%20wheatberries%20along%20with%3C/p%3E%3Cp%3Ethe%20sweetness%20of%20the%20roasted%20and%20slightly%20caramlized%20vegetables%20.%20.%20.%3C/p%3E%3Cp%3Edoused%20in%20a%20tangy%20lemon%20and%20parsley%20vinaigrette.%20%20%20This%20is%20delicious%20and%3C/p%3E%3Cp%3Epretty%20and%20looks%20fab%20on%20the%20buffet%20table!%20%20(Not%20to%20mention%20it's%20a%20great%3C/p%3E%3Cp%3Euse%20for%20all%20that%20leftover%20extra%20veg%20you%20got%20in%20over%20Christmas!)%3C/p%3E%3Cp%3Efor%2020%20to%2025%20minutes,%20stirring%20them%20once%20or%20twice.%20%20They%20should%20be%3C/p%3E%3Cp%3Ecooked%20through%20and%20beginning%20to%20slightly%20caramelize.%3C/p%3E%3Cp%3EWhile%3C/p%3E%3Cp%3Ethe%20vegetables%20are%20cooking%20bring%20the%20vegetable%20stock%20to%20the%20boil.%20%20%20Add%3C/p%3E%3Cp%3Ethe%20wheat%20berries%20and%20cook,%20until%20tender,%20but%20still%20chewy,%20about%2030%20to%3C/p%3E%3Cp%3E35%20minutes.%3C/p%3E%3Cp%3EWhile%20the%20vegetables%20and%20wheat%20berries%20are%3C/p%3E%3Cp%3Ecooking,%20measure%20the%20lemon%20juice%20into%20a%20large%20shallow%20salad%20bowl.%20%20%20Toss%3C/p%3E%3Cp%3Eiin%20the%20minced%20shallot%20and%20seasoning.%20%20%20Allow%20to%20stand%20for%20about%2010%3C/p%3E%3Cp%3Eminutes,%20then%20whisk%20in%20the%20oil.%3C/p%3E%3Cp%3EOnce%20cooked,%20drain%20the%20wheat%3C/p%3E%3Cp%3Eberries%20and%20toss%20them%20into%20the%20dressing,%20whisking%20it%20first.%20%20Add%20the%3C/p%3E%3Cp%3Eroasted%20root%20vegetables,%20discarding%20any%20thyme%20branches.%20%20Stir%20in%20the%3C/p%3E%3Cp%3Echerries%20or%20cranberries%20and%20the%20nuts,%20if%20using.%20%20%20Taste%20and%20adjust%3C/p%3E%3Cp%3Eseasoning%20as%20necessary.%20%20Toss%20in%20the%20parsley%20and%20serve.%3C/p%3E%3Cp%3EYou%20may%3C/p%3E%3Cp%3Eserve%20this%20warm%20or%20at%20room%20temperature.%20%20You%20can%20make%20it%20several%20days%20in%3C/p%3E%3Cp%3Eadvance,%20in%20which%20case%20you%20should%20store%20it%20in%20the%20refrigerator%20and%20then%3C/p%3E%3Cp%3Ebring%20it%20to%20room%20temperature%20prior%20to%20serving.%20%20Do%20not%20add%20the%3C/p%3E%3Cp%3Enuts%20or%20parsley%20until%20just%20before%20serving.%20%20A%20bit%20of%20feta,%20blue%20cheese%3C/p%3E%3Cp%3Eor%20stilton%20crumbled%20over%20top%20makes%20a%20nice%20addition!%3C/p%3E){kind=link}
