Roasted Potato With Blue Cheese And Sherry Sauce

Ингредиенты

  • 1/2 c. sherry vinegar
  • 2 tsp honey
  • 1 lb yellow potatoes
  • 1 tsp dry thyme leaves, minced
  • 1/2 tsp each: paprika, grnd cumin
  •     Salt, freshly grnd pepper
  • 1 Tbsp. extra virgin olive oil
  • 2 Tbsp. soft blue cheese, Cabrales preferred

  1. Pour vinegar into a small saucepan; heat to a boil. Cook till reduced to about 1 Tbsp.. Add in honey; stir till it dissolves. Set aside.
  2. Heat oven to 450 degrees. Peel the potatoes, if desired. Cut crosswise into inch slices; spread on a non-stick baking sheet.
  3. Combine thyme, paprika, cumin, and salt and pepper to taste. Stir in extra virgin olive oil. Brush potatoes with this mix. Bake till golden brown, about 12 min.
  4. Divide potato slices between two plates. Place a dab of cheese in the center of each slice; sprinkle vinegar glaze on top.
