.%20%20Potatoes%20have%20to%20be%20the%20main%20ingredient.%20%20You%20can%20make%20a%20hot%20soup,%20a%20cold%20soup%20or%20something%20in%20between.%20%20%20So%20here%20goes.%3C/p%3E%3Cp%3EI%20was%20going%20to%20make%20a%20potato%20soup%20my%20niece%20made%20for%20us%20once.%20%20%20%20It%20was%20so%20good%20and%20I%20got%20the%20recipe%20at%20the%20time,%20but%20I%20put%20the%20recipe%20somewhere%20safe%20and%20one%20of%20these%20days%20I'll%20find%20it%20and%20then%20watch%20out%20world,%20I'm%20coming%20through.%3C/p%3E%3Cp%3EBut%20in%20the%20meantime,%20I%20had%20to%20come%20up%20with%20a%20soup%20for%20this%20month's%20theme.%3C/p%3E%3Cp%3EPotato%20Soup.%3C/p%3E%3Cp%3EDo%20you%20have%20any%20idea%20how%20many%20potato%20soup%20recipes%20are%20on%20the%20internet?%20%20Yeah,%20me%20neither,%20but%20there%20are%20a%20lot.%3C/p%3E%3Cp%3EYou%20can%20go%20French%20with%20a%20lovely%20Vichyssoise,%20and%20it%20is%20a%20soup%20I%20love%20but%20I%20wanted%20something%20hot.%20And%20didn't%20feel%20like%20searching%20high,%20low%20and%20in%20between%20for%20leeks%20either.%3C/p%3E%3Cp%3EI%20looked%20at%20Ireland%20for%20their%20potato%20soup,%20but%20it%20didn't%20appeal.%3C/p%3E%3Cp%3EI%20even%20looked%20at%20my%20Danish%20roots%20but%20didn't%20feel%20like%20cooking%20a%20ham%20to%20get%20the%20stock.%3C/p%3E%3Cp%3ESo%20I%20did%20a%20search%20of%20my%20freezer%20and%20my%20fridge,%20and%20look%20what%20I%20came%20up%20with.%3C/p%3E%3Cp%3EI%20had%20some%20lovely%20pork%20stock%20in%20the%20freezer%20as%20well%20as%20some%20chicken%20stock%20and%20there%20was%20most%20of%20a%20bag%20of%20Heirloom%20Carrots%20in%20the%20produce%20bin%20along%20with%20a%20couple%20of%20parsnips.%20%20%20I'm%20calling%20this%20Roasted%20Potato%20and%20Heirloom%20Carrot%20Soup.%20%20It%20can%20be%20made%20totally%20vegetarian%20or%20add%20some%20pork%20to%20it%20for%20a%20heartier%20take.%3C/p%3E%3Cp%3EAnd%20you%20know%20what%20happens%20when%20you%20roast%20vegetables.%3C/p%3E%3Cp%3EThey%20get%20sweet%20and%20luscious%20and%20totally%20yummy.%3C/p%3E%3Cp%3EAnd%20you%20have%20to%20stop%20eating%20the%20freshly%20roasted%20vegetable%20so%20you%20can%20leave%20some%20for%20the%20soup.%3C/p%3E%3Cp%3EWait,%20that%20was%20me.%3C/p%3E%3Cp%3ETo%20start%20with%20I%20tossed%20the%20peeled%20potatoes,%20parsnips%20and%20carrots%20in%20a%20little%20olive%20oil,%20sprinkled%20them%20with%20a%20teensy%20bit%20of%20sea%20salt%20and%20roasted%20them%20in%20the%20oven%20for%20over%2020%20minutes%20at%20450%20degrees.%3C/p%3E%3Cp%3EI%20turned%20them%20over%20after%20ten%20minutes%20and%20then%20turned%20the%20broiler%20on%20for%20an%20additional%20%202%20minutes.%3C/p%3E%3Cp%3EWhile%20they%20were%20roasting%20I%20had%20the%20chicken%20and%20pork%20stock%20on%20top%20of%20the%20stove%20simmering%20away.%20%20%20%20I%20tasted%20it%20for%20seasoning%20and%20turned%20off%20the%20heat.%20%20As%20soon%20as%20the%20potatoes%20and%20carrots%20were%20done,%20I%20put%20them%20onto%20a%20cutting%20board%20and%20chopped%20them%20up%20a%20little%20more.%3C/p%3E%3Cp%3EThe%20soup%20was%20really%20thin%20so%20I%20added%20a%20little%20roasted%20garlic%20instant%20potato%20flakes%20to%20the%20soup,%20let%20it%20cook%20another%20minute%20to%20thicken%20just%20a%20tad%20and%20then%20I%20dumped%20the%20chopped%20potatoes,%20carrots%20and%20parsnips%20into%20the%20pot,%20and%20let%20it%20come%20back%20up%20to%20temp.%3C/p%3E%3Cp%3EI%20added%20some%20cooked%20pork%20to%20the%20top%20of%20my%20bowl%20that%20I'd%20browned%20a%20little%20and%20decided%20that%20from%20now%20on,%20the%20pork%20will%20definitely%20be%20a%20part%20of%20the%20main%20soup.%20%20And%20of%20course%20a%20sprinkle%20of%20chives.%3C/p%3E%3Cp%3ERoasted%20Potato%20and%20Heirloom%20Carrot%20Soup%3C/p%3E%3Cp%3Eprep%20time:%205%20minscook%20time:%2021%20minstotal%20time:%2026%20mins%3C/p%3E%3Cp%3EThis%20is%20a%20great%20soup%20for%20those%20cooler%20temperatures.%20A%20quick%20and%20hearty%20soup,%20which%20can%20ready%20in%20just%20a%20half%20hour%20or%20so%20and%20tastes%20like%20you've%20been%20slaving%20all%20day.%20Serve%20with%20a%20crusty%20roll%20for%20great%20tasting%20meal.%3C/p%3E%3Cp%3Eingredients:%3C/p%3E%3Cp%3Einstructions:%3C/p%3E%3Cp%3ETurn%20oven%20on%20to%20450%20degrees.%20%20Get%20out%20a%20pan%20with%20sides.%3C/p%3E%3Cp%3ESpray%20with%20some%20non%20stick%20spray.%3C/p%3E%3Cp%3EPeel%20the%20potatoes,%20carrots%20and%20parsnips.%20%20%20Cut%20the%20potatoes%20into%20quarters,%20and%20set%3C/p%3E%3Cp%3Easide.%20%20Cut%20the%20carrots%20into%3C/p%3E%3Cp%3Echunks.%20%20Sprinkle%20them%20with%20some%20olive%3C/p%3E%3Cp%3Eoil%20and%20a%20little%20sea%20salt.%20%20Toss%3C/p%3E%3Cp%3Etogether%20and%20place%20on%20baking%20sheet.%3C/p%3E%3Cp%3ERoast%20at%20450%20degrees%20for%2010%20minutes,%20turn%20over%20and%20roast%20an%20addition%2010%3C/p%3E%3Cp%3Eminutes%20or%20until%20the%20vegetables%20are%20done.%3C/p%3E%3Cp%3EIf%20the%20veggies%20aren't%20browned,%20place%20them%20under%20the%20broiler%20for%20an%3C/p%3E%3Cp%3Eadditional%202-%203%20minutes.%3C/p%3E%3Cp%3EWhile%20the%20vegetables%20are%20roasting,%20bring%20the%20stock%20to%20a%20boil,%20cook%20for%20a%20couple%3C/p%3E%3Cp%3Eof%20minutes,%20and%20add%20some%20instant%20potato%20flakes.%20%20I%20used%20the%20roasted%20garlic%20kind.%3C/p%3E%3Cp%3EWhisk%20it%20into%20the%20stock%20and%20let%20cook%20for%20a%20couple%20of%20minutes.%3C/p%3E%3Cp%3ETake%20the%20roasted%20vegetables%20out%20of%20the%20oven,%20and%20do%20a%20rough%3C/p%3E%3Cp%3Echop.%20%20Add%20to%20the%20soup%20and%20let%20it%20come%3C/p%3E%3Cp%3Eto%20a%20quick%20boil.%20%20Remove%20from%20heat.%3C/p%3E%3Cp%3EIn%20a%20small%20pan,%20heat%20the%20teaspoon%20of%20oil,%20and%20add%20the%20finely%3C/p%3E%3Cp%3Echopped%20cooked%20pork.%20%20Let%20it%20brown%20a%3C/p%3E%3Cp%3Elittle.%3C/p%3E%3Cp%3EServe%20the%20soup%20in%20bowls%20and%20add%20the%20browned%20pork%20to%20the%3C/p%3E%3Cp%3Etop.%20%20Garnish%20with%20a%20little%20chopped%3C/p%3E%3Cp%3Echives%20for%20color.%3C/p%3E%3Cp%3ENote:%20%20You%20could%20also%20make%20this%20a%20total%20veggie%20soup%20by%20using%20vegetable%20stock%20and%20not%20using%20any%20pork.%20%20Although%20I%20think%20some%20fried%20crispy%20tofu%20would%20taste%20good%20with%20it%20as%20well.%3C/p%3E%3Cp%3EI've%20also%20been%20a%20teensy%20bit%20busy%20this%20week.%20%20I%20baked%20not%20only%20a%20wedding%20cake%20but%20also%20a%20grooms%20cake%20and%20am%20heading%20down%20to%20decorate%20the%20groom's%20cake%20right%20now.%20%20Both%20of%20which%20are%20in%20the%20freezer%20for%20now.%3C/p%3E%3Cp%3EIt's%20a%20black%20velvet%20cake%20with%20black%20cream%20cheese%20frosting%20and%20a%20batman%20theme.%20%20%20Should%20be%20fun.%3C/p%3E%3Cp%3EIn%20the%20meantime,%20check%20out%20some%20other%20great%20soups.%3C/p%3E){kind=link}
