- 3 eggs at room temp
- 3/4 t. vanilla extract
- 1 C. all purpose flour
- 1/2 t. baking powder
- 1/4 t. salt
- 1/2 t. freshly ground nutmeg
- 1 1/2 T. milk

,%20is%20the%20perfect%20companion%20to%20the%20roasted%20plums%20in%20this%20cake.%20%20The%20citrus%20cuts%20through%20the%20intensity%20of%20the%20plums%20and%20contributes%20to%20the%20color%20of%20the%20moist%20crumb.%20%20%20I%20have%20to%20tell%20you%20though%20that%20the%20real%20color%20agent%20in%20the%20cake%20I%20baked%20were%20the%20intense%20orange%20yolks%20of%20the%20local%20farm%20fresh%20brown%20eggs.%20%20Never%20underestimate%20the%20power%20of%20those%20fresh%20local%20eggs.%3C/p%3E%3Cp%3EAnd%20while%20we%E2%80%99re%20on%20the%20subject%20of%20local%20farm%20products,%20find%20yourself%20a%20pint%20of%20local%20heavy%20whipping%20cream%20and%20flog%20it%20into%20soft%20peaks%20with%20just%20a%20touch%20of%20confectioners%20sugar%20or%20honey%20to%20adorn%20each%20slice%20of%20cake.%20%20Trust%20me,%20it%E2%80%99s%20both%20worth%20the%20effort%20to%20seek%20out%20a%20local%20creamery%20for%20the%20cream%20and%20the%20effort%20to%20whip%20your%20own%20as%20it%20takes%20this%20cake%20from%20decadent%20to%20downright%20divine!%3C/p%3E%3Cp%3EROASTED%20PLUMS%20&%20LEMON%20CAKE%3C/p%3E%3Cp%3EA%20Straight%20from%20the%20Farm%20Original%3C/p%3E%3Cp%3ERoasted%20Plums%3C/p%3E%3Cp%3E6%20plums%3C/p%3E%3Cp%3E1%20vanilla%20bean,%20split%20and%20scraped%3C/p%3E%3Cp%3Estar%20anise%3C/p%3E%3Cp%3E1/4%20C.%20orange%20juice%20(fresh%20is%20best)%3C/p%3E%3Cp%3E1/2%20C.%20raw%20sugar,%20some%20for%20roasting%20and%20some%20for%20sprinkling%20at%20the%20end%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%20F.%3C/p%3E%3Cp%3ECut%20the%20plums%20in%20half%20and%20remove%20the%20pit.%20Place%20them%20on%20a%20small%20roasting%20pan.%20Add%20the%20star%20anise,%20vanilla%20bean,%20orange%20juice.%20Toss%20with%20your%20hands%20to%20combine.%20%20Sprinkle%20generously%20with%20sugar.%20%20%20Place%20plums%20in%20the%20oven%20for%20about%2030-40%20minutes%20or%20until%20tender%20and%20aromatic.%20%20Serve%20plums%20warm%20or%20chilled%20over%20just%20about%20any%20baked%20good%20or%20ice%20cream.%20%20For%20the%20cake%20recipe%20below,%20cut%20plums%20into%20thin%20wedges%20and%20set%20aside.%3C/p%3E%3Cp%3ECake%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%20F.%20%20Prepare%20a%20shallow%20large%20tart%20pan%20(mine%20was%2012%E2%80%B3)%20or%20large%20loaf%20pan%20with%20nonstick%20baking%20spray.%20Set%20aside.%3C/p%3E%3Cp%3EWash%20and%20dry%20the%20lemons.%20%20Zest%20them%20and%20then%20juice%20them,%20setting%20both%20aside.%3C/p%3E%3Cp%3EIn%20a%20medium%20mixing%20bowl,%20%20cream%20together%20butter%20and%20sugar%20until%20pale%20and%20creamy.%20Add%20eggs%20one%20at%20a%20time,%20beating%20well%20after%20each%20addition.%20Add%20vanilla%20and%20lemon%20zest%20to%20the%20mixture%20and%20combine%20well.%20%20Add%20the%20lemon%20juice%20and%20mixing%20just%20until%20combined.%20The%20lemon%20juice%20will%20react%20with%20the%20baking%20powder%20to%20add%20air%20into%20the%20batter%20so%20be%20gentle%20from%20here%20on%20out%20so%20as%20to%20avoid%20deflating%20the%20batter%20too%20much.%3C/p%3E%3Cp%3ESift%20together%20the%20flour,%20baking%20powder,%20salt%20and%20grated%20nutmeg.%20%20%20Slowly%20add%20the%20dry%20ingredients%20and%20mix%20carefully%20just%20until%20combined.%20Add%20milk%20and%20gently%20fold%20in%20until%20evenly%20distributed.%20Pour%20into%20prepared%20pan.%20%20Lay%20roasted%20plum%20slices%20along%20the%20top%20of%20the%20cake%20batter.%3C/p%3E%3Cp%3EPlace%20in%20oven%20and%20bake%20until%20golden%20and%20the%20cake%20springs%20back%20when%20pressed%20with%20a%20finger,%20about%2035%20minutes.%20%20Allow%20cake%20to%20cool%20completely%20before%20slicing.%20%20Serve%20with%20a%20generous%20dollop%20of%20sweetened%20whipped%20cream.%3C/p%3E%3Cp%3E(serves%2012)%3C/p%3E%3Cp%3EEntry%20filed%20under:%20Recipes,%20Sweet%20Treats.%20Tags:%20baking,%20cake,%20cooking,%20food,%20recipe.%3C/p%3E){kind=link}
