%20%20but%20I%20especially%20love%20them%20roasted!%20%20Roasting%20them%20helps%20to%20bring%20out%20their%20natural%20sweetness%20and%20nuttiness%20.%20.%20.%20and%20well%20.%20.%20.%20I%20just%20think%20it%20brings%20out%20the%20best%20in%20each%20of%20them.%20%20I%20have%20never%20met%20a%20roasted%20root%20that%20I%20didn't%20immediately%20fall%20head%20over%20heels%20with!%20%20'Tis%20absolutely%20true.%20%20Cross%20my%20heart%20and%20hope%20to%20die.%3C/p%3E%3Cp%3EI%20found%20this%20delicious%20recipe%20in%20one%20of%20my%20cookbooks,%20called%20The%20Delicious%20Cookbook.%20%20It%20is%20a%20book%20put%20out%20by%20one%20of%20my%20favourite%20cookery%20magazines,%20Delicious%20magazine%20.%20.%20.%20and%20this%20book%20is%20every%20bit%20as%20good%20as%20it's%20title%20makes%20you%20think%20it%20is.%20%20%20It's%20just%20chocker%20block%20full%20of%20tasty%20recipes!%20%20I%20got%20mine%20free%20for%20subscribing%20to%20a%20magazine.%20%20I%20can't%20remember%20which%20one,%20but%20I%20just%20love%20,%20LOVE%20it!%3C/p%3E%3Cp%3EThis%20dish%20was%20really%20easy%20to%20throw%20together%20and%20helped%20to%20use%20up%20some%20stale%20sour%20dough%20bread%20I%20wanted%20to%20use%20up.%20%20%20I%20always%20have%20parsnips%20and%20carrots%20in%20my%20vegetable%20drawer.%20%20%20I%20also%20always%20have%20walnuts.%20%20%20Who%20knew%20that%20these%20things%20would%20taste%20so%20wonderful%20when%20put%20together%20in%20such%20an%20imaginative%20way!%3C/p%3E%3Cp%3EThe%20walnut%20sauce%20is%20amazing%20and%20so%20very%20simple%20to%20throw%20together%20.%20.%20.%20stale%20bread,%20vinegar,%20oil,%20fresh%20parsley,%20seasoning%20and%20%20.%20.%20.%20toasted%20walnuts.%20%20Fabulous!%3C/p%3E%3Cp%3EIt%20was%20fabulous%20hot%20and%20freshly%20made%20.%20.%20.%20but%20it%20also%20tasted%20very,%20very%20good%20cold.%20%20There%20are%20only%20two%20of%20us%20and%20I%20found%20myself%20picking%20at%20it%20the%20whole%20rest%20of%20the%20day.%20%20%20In%20short%20.%20.%20.%20I%20couldn't%20leave%20it%20alone.%20%20%20This%20is%20a%20new%20favourite%20around%20here%20and%20I%20hope%20that%20it%20will%20become%20a%20new%20favourite%20of%20yours%20as%20well!%3C/p%3E%3Cp%3E*Roasted%20Parsnips%20and%20Carrots%20with%20a%20Walnut%20Sauce*%3C/p%3E%3Cp%3EServes%206%3C/p%3E%3Cp%3EYou'll%3C/p%3E%3Cp%3Ewant%20to%20use%20smaller%20carrots%20and%20parsnips%20for%20this%20delicious%20side%3C/p%3E%3Cp%3Edish.%20%20%20Each%20mouthful%20brings%20you%20the%20delightful%20sweetness%20of%20the%20roasted%3C/p%3E%3Cp%3Eroot%20vegetables,%20along%20side%20the%20tang%20of%20a%20fabulous%20dressing/sauce.%3C/p%3E%3Cp%3EThis%20is%20just%20wonderful!%3C/p%3E%3Cp%3Ecarrots.%20%20%20You%20can%20peel%20them%20if%20you%20like,%20but%20it's%20not%20necessary.%3C/p%3E%3Cp%3EDivide%20them%20amongst%20two%20large%20rimmed%20baking%20sheets.%20%20%20Drizzle%20with%20the%3C/p%3E%3Cp%3Eoil%20and%20sprinkle%20with%20some%20sea%20salt.%20%20Toss%20to%20coat.%20%20Roast%20for%2020%3C/p%3E%3Cp%3Eminutes.%20%20Remove%20them%20from%20the%20oven%20and%20give%20them%20a%20stir%20and%20then%20return%3C/p%3E%3Cp%3Ethem%20to%20the%20oven%20and%20continue%20to%20roast%20until%20they%20are%20tender%20and%3C/p%3E%3Cp%3Ebeginning%20to%20caramelize.%20%20%20(up%20to%2020%20minutes%20longer.)%20%20The%20oil%20will%20be%3C/p%3E%3Cp%3Eslightly%20infused%20with%20the%20colour%20of%20the%20carrots%20and%20some%20of%20the%3C/p%3E%3Cp%3Esweetness%20of%20the%20vegetables.%20%20Don't%20discard%20it.%20%20Keep%20it%20to%20drizzle%20over%3C/p%3E%3Cp%3Ethe%20finished%20dish%20when%20you%20serve%20it.%20%20Keep%20the%20vegetables%20warm.%3C/p%3E%3Cp%3EWhile%3C/p%3E%3Cp%3Ethe%20vegetables%20are%20roasting%20make%20the%20walnut%20sauce.%20%20%20Tear%20the%20bread%3C/p%3E%3Cp%3Einto%20bits%20and%20place%20it%20into%20a%20bowl.%20%20Mix%20together%20with%20the%20vinegar%20and%3C/p%3E%3Cp%3Ehalf%20of%20the%20oil.%20%20Add%20about%202%20TBS%20of%20cold%20water.%20%20%20Allow%20to%20sit%20for%3C/p%3E%3Cp%3Eabout%2010%20minutes,%20until%20the%20bread%20is%20soft.%20%20%20Squash%20it%20with%20the%20back%20of%20a%3C/p%3E%3Cp%3Espoon%20into%20a%20paste.%3C/p%3E%3Cp%3EPlace%20the%20walnut%20pieces%20onto%20a%20baking%3C/p%3E%3Cp%3Etray.%20%20%20Place%20in%20the%20oven%20to%20toast%20for%20about%2010%20minutes.%20%20Remove%20and%3C/p%3E%3Cp%3Eshake%20off%20as%20much%20of%20the%20skins%20as%20you%20can%20by%20shaking%20them%20gently%20in%20a%3C/p%3E%3Cp%3Emetal%20colander.%20%20(The%20skins%20will%20fall%20through%20the%20holes,%20so%20do%20it%20over%3C/p%3E%3Cp%3Ethe%20sink.)%20%20Roughly%20crush%20the%20nuts%20with%20a%20mortar%20and%20pestle,%20or%20rolling%3C/p%3E%3Cp%3Epin.%20%20(Don't%20use%20a%20food%20processor,%20you%20want%20them%20coarse,%20not%20fine.)%3C/p%3E%3Cp%3ERoughly%3C/p%3E%3Cp%3Echop%20the%20parsley%20and%20garlic,%20%20Toss%20it%20in%20with%20the%20bread%20mixture%20along%3C/p%3E%3Cp%3Ewith%20the%20nuts,%20and%20the%20remainder%20of%20the%20oil.%20%20%20Season%20to%20taste.%20%20Place%3C/p%3E%3Cp%3Ethe%20roasted%20vegetables%20along%20with%20any%20of%20their%20juices%20onto%20a%20serving%3C/p%3E%3Cp%3Eplatter.%20%20Drizzle%20with%20the%20walnut%20sauce%20and%20serve%20immediately.%3C/p%3E){kind=link}
