.%3C/p%3E%3Cp%3EHeidi%20is%20from%20Denmark,%20and%20she%20loves%20to%20bake%20breads,%20cakes,%20ice%20creams%20and%20other%20desserts,%20but%20she%20also%20makes%20savory%20dishes%20of%20all%20kinds.%20Her%20blog%20is%20in%20Danish,%20but%20if%20you%20go%20to%20the%20page%20%22Important:%20For%20Foreign%20Visitors!%22%20you%20can%20find%20out%20how%20to%20view%20it%20in%20English%20(hint:%20it's%20much%20easier%20if%20you%20are%20using%20Firefox%20rather%20than%20Internet%20Explorer).%20Once%20we%20did%20that,%20we%20had%20a%20hard%20time%20choosing%20a%20recipe%20because%20there%20were%20so%20many%20and%20they%20all%20sounded%20so%20good.%20While%20we%20really%20wanted%20to%20try%20one%20of%20her%20ice%20creams,%20we%20thought%20we'd%20come%20back%20to%20those%20when%20it's%20a%20little%20warmer%20out.%20We%20didn't%20have%20a%20whole%20lot%20of%20time,%20so%20we%20chose%20not%20to%20bake%20anything.%20Since%20it%20was%20blustery%20and%20cold%20here,%20we%20zoomed%20in%20on%20the%20soup%20section%20and%20finally%20decided%20to%20make%20her%20Roasted%20Garlic%20Soup.%3C/p%3E%3Cp%3EThe%20most%20important%20ingredient:%20roasted%20garlic%3C/p%3E%3Cp%3EWe've%20made%20a%20similar%20recipe%20with%20garlic%20and%20potatoes,%20and%20were%20curious%20as%20to%20how%20this%20one%20would%20compare.%20We%20made%20a%20couple%20of%20minor%20adaptations%20based%20on%20what%20we%20had%20around%20the%20house,%20most%20importantly%20substituting%20madeira%20for%20Heidi's%20preference,%20sherry.%20The%20soup%20was%20fantastic,%20and%20even%20better%20when%20we%20had%20it%20again%20for%20lunch%20the%20following%20day.%20The%20texture%20was%20light,%20silky%20smooth%20yet%20it%20was%20completely%20filling%20and%20satisfying.%20The%20flavors%20from%20all%20of%20the%20alliums%20made%20it%20something%20that%20could%20be%20enjoyed%20year-round,%20and%20the%20madeira%20offered%20a%20unique%20hint%20of%20sweetness.%20There%20was%20a%20nice%20deep%20flavor%20that%20we%20guess%20came%20%20from%20roasting%20the%20garlic%20first.%20We%20even%20surrendered%20offered%20a%20small%20portion%20to%20Joanne%20who%20pronounced%20it%20%22restaurant-worthy%22%20and%20wrote%20about%20it%20on%20her%20blog.%20Yeah,%20even%20with%20its%20garlic-breath%20side%20effect,%20we%20loved%20this%20soup.%20Thanks,%20Heidi!%3C/p%3E%3Cp%3ECook%20the%20roasted%20garlic,%20onions%20and%20leeks...%3C/p%3E%3Cp%3EAdd%20flour%20to%20thicken%20the%20soup.%3C/p%3E%3Cp%3EStir%20in%20the%20warm%20broth%20and%20madeira%20wine.%3C/p%3E%3Cp%3EBlend%3C/p%3E%3Cp%3ESwirl%20in%20the%20cream%20and%20allow%20to%20simmer.%3C/p%3E%3Cp%3ERoasted%20Garlic%20Soup%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%20degrees.%20Cut%20off%20the%20top%201/4%20inch%20of%20each%20garlic%20head.%20Place%20in%20a%20small,%20shallow%20baking%20dish%20and%20drizzle%20with%20olive%20oil.%20Bake%20until%20golden,%2045%20minutes%20to%201%20hour.%20Cool%20slightly.%20Press%20the%20individual%20garlic%20cloves%20between%20thumb%20and%20finger%20to%20release,%20then%20chop%20the%20garlic.%20Pour%20the%20chicken%20broth%20into%20a%20small%20saucepan%20and%20set%20over%20medium%20heat%20to%20warm.%20In%20a%20large%20saucepan,%20over%20medium%20heat,%20melt%20the%20butter.%20Add%20garlic,%20leeks,%20and%20onion;%20saute%20until%20onion%20is%20translucent,%20about%208%20minutes.%20Gradually%20add%20flour,%20and%20cook%2010%20minutes,%20stirring%20occasionally.%20Stir%20in%20warm%20broth%20and%20madeira.%20Simmer%2020%20minutes,%20stirring%20occasionally.%20Puree%20soup%20using%20an%20immersion%20blender.%20Swirl%20in%20the%20cream,%20then%20simmer%20until%20thickened,%20about%2010%20minutes.%20Season%20with%20lemon%20juice,%20salt%20and%20white%20pepper.%20Ladle%20into%20bowls.%20Garnish%20with%20chives.%20Serve%20crusty%20bread%20on%20the%20side%20and%20enjoy.%3C/p%3E){kind=link}
