Are you among the 99.9% of the population that set a goal to loose weight this year? Yah, me too. Which means that at least for this week, we will all be eating healthy. Next week all bets are off, and I will be back to posting recipes for foods full of chocolate, butter, and sugar. Because I am highly motivated by comments, and those recipes get way more of a response from all of you. But for today, I am sharing a totally healthy, diet friendly recipe to start us off on our quest to shed some pounds.

My boys do not like cauliflower. They will eat just about any vegetable, but for some reason they wont' touch cauliflower. Which has always puzzled me, because they love broccoli. Go figure. Anywhoo, a few weeks ago I ended up with a head of cauliflower (long story). So I knew I needed to find a creative way to serve it if I had any chance of it being consumed. I found this recipe for roasted cauliflower over at Mel's Kitchen Cafe. She's never steered me wrong, so I decided to give it a try.

And miracle of miracles, my boys actually ate their cauliflower! A few of them even had seconds. I think that the fact that it bears a slight resemblance to popcorn had a little bit to do with it. Haha! Now that I've tried roasted cauliflower, I can never go back to steamed. The flavor is so much better. If you like cauliflower, (or even if you think you don't), you might want to give this a try. It's not going to replace brownies or cheesecake (I'm not that naive), but it would make a good snack or side dish. And let me just say that if you let kids eat it sans forks, it goes over a lot better.

Roasted Cauliflower

Wash cauliflower and break into bite sized pieces. Toss together with remaining ingredients. Pour onto a greased cookie sheet with sides. Bake at 475° for about 16 minutes, turning every few minutes. Cauliflower should be crisp tender.
