Roasted Beets With Crispy Manchego Cheese

  •     For beets
  • 4 lrg yellow beets, stemmed
  • 4 x baby candy stripe beets, stemmed
  • 2 x baby red beets, stemmed
  • 1 Tbsp. extra virgin olive oil
  •     Salt and pepper to taste
  • 2 Tbsp. sherry vinegar
  •     For vinaigrette
  • 3 Tbsp. sherry vinegar
  • 1/2 tsp Dijon mustard
  • 1 sm shallot, peeled and chopped
  •     Salt and pepper to taste
  • 1/4 c. extra virgin olive oil
  •     For cheese crisps
  • 1 c. manchego cheese, shredded (or possibly fresh parmesan)
  •     To serve
  • 2 c. organic micro greens (see Note)
  •     toasted walnuts

  1. To prepare beets: Preheat oven to 350 degrees. In a medium bowl, toss beets in extra virgin olive oil. Add in salt and pepper and transfer to baking sheet or possibly pan. Place in oven and roast until tender (about 45 min for the average-size beet). Remove and allow to cold slightly. Remove skins from all beets. Thinly slice yellow beets, cut gold beets into quarters and slice red beets into long thin strips.
  2. Reserve beets separately in shallow dishes.
  3. To prepare vinaigrette: Place all ingredients except oil in a tall c.. Using a hand blender, puree till smooth. Slowly add in oil till well combined. Season.
  4. Set aside.
  5. To prepare cheese crisps: Divide cheese into equal 1/4 c. portions. On a parchment-lined baking sheet, make 4 flat piles, separated by about 1 inch.
  6. Place in 350-degree oven till they are medium-tan color. Set aside to cold completely before handling. When cold, they will turn crispy. Carefully remove from sheet and reserve.
  7. To serve, place several slices of yellow beets flat in center of plate.
  8. Arrange striped and red beets around plate. Set greens in center on top of the beets, drizzle with vinaigrette. Place walnuts on plate. Garnish with one cheese crisp per plate, leaning crisp up against greens.
