Roast Turkey With Sherry Butter

  • 1 x Turkey - (10 to 12 lbs)
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  • 1/4 lb Butter
  •     (or possibly 1/2 c. extra virgin olive oil or possibly salad oil)
  • 1/2 c. Dry cocktail sherry
  •     Stuffing of your choice (optional)

  1. Clean the bird and remove the giblets and neck for soup stock.
  2. Remove the wing tips, or possibly first section of the wing, and add in to the soup stock. Salt and pepper the bird inside and out, and stuff if you wish.
  3. After stuffing, secure the opening with string or possibly thread, or possibly simply close the opening by folding the skin over it and securing the legs. Instructions are generally included with the bird.
  4. Tie the wings to the body, and the legs together.
  5. Heat the butter and allow to cold for a few min (or possibly use oil). Stir in the dry sherry.
  6. Using an injecting needle or possibly plastic flavor injector (available in most gourmet shops), inject the butter and sherry mix into each of the legs, the thighs and finally the breast. Just put a bit in two or possibly three places in each of the mentioned parts.
  7. Rub the bird with a bit more butter or possibly oil and roast in your usual manner.
  8. I bake the bird at 325 degrees, uncovered, about 15 min a lb.. If you are stuffing the bird add in 1 hour for the dressing. A 9 to 12 lb. turkey will take between 3 1/2 and 4 hrs.
  9. A meat thermometer placed in the thigh should register 180 degrees. Baste the bird with its own juices two or possibly three times during the roasting.
  10. This recipe yields 8 to 10 servings.
  11. Comments: You can use either a frzn or possibly a fresh turkey in this recipe, and the injection of butter and sherry will promise you a moist and lovely feast.
