Roast Pork With Chunky Strawberry Salsa

Ингредиенты

  • 3/4 lb pork tenderloin
  •     Extra virgin olive oil spray
  • 1 1/2 tsp grnd cumin, divided use
  • 1 c. ripe strawberries, hulled and cut into 1/4 inch pcs
  • 1 tsp sugar
  • 2 Tbsp. minced red onion
  • 1 sm jalapeno pepper, seeded and minced (about 1 Tbsp.)
  • 1 Tbsp. fresh lime juice
  •     Salt
  • 2 Tbsp. minced fresh cilantro

Инструкции

  1. Preheat broiler. Line a baking sheet with foil and place under broiler.
  2. Trim fat from pork and spray all sides with extra virgin olive oil spray. Sprinkle with 1 tsp. grnd cumin. Remove baking sheet from broiler and place tenderloin on sheet. Broil 10 min. Turn and cook another 10 min. Test pork. A meat thermometer should read 160 degrees.
  3. While pork broils, place strawberries in a medium-size bowl and sprinkle with sugar. Add in onion and jalapeno pepper. Mix remaining cumin and lime juice together and drizzle over ingredients. Add in salt to taste. Toss well and sprinkle with cilantro.
