  • 1/2 x Bay leaf -- crushed
  • 1 x Loin roast venison
  • 1/2 tsp Celery seeds
  • 1/2 lb Salt pork -- cut into
  •     Strips
  • 1/2 tsp Dry thyme
  • 1 sm Onion -- minced
  •     To
  • 10 ml Garlic -- chopped
  • 4 whl cloves
  • 1 Tbsp. Fresh parsley -- minced
  • 1 tsp Beef bouillon
  •     Taste

  1. Fold 2 large sheets of aluminum foil together with a double fold. There should be sufficient to enclose the roast. Place roast on foil. Lard with pork strips. Stick cloves into loin and sprinkle other ingredients over top.
  2. Enclose roast tightly in foil and cook in 300 degree oven for approximately 45 min PER lb..
