Рецепт Ring in the New Year with Lucky Arugula Salad
We are at the end of 2013, and in spite of the unlucky number 13 it was not an unlucky year for me, maybe it’s because I ate a good luck food last New Year’s Day. Many people from around the world serve up traditional good luck foods on New Year’s Day to symbolize abundance, wealth, longevity and prosperity. The Spanish and Portuguese eat 12 grapes at midnight as the clock chimes 12 times, some eat ring shaped foods at breakfast to symbolize the year coming full circle, and some believe that pork is a symbol of progress. This month The Recipe Redux is challenging us to share our good luck dish to start off the new year, and I am sharing one of my favorites that takes minutes to put together and is full of flavor – Arugula and Onion Salad. Yes, greens are on the Top 10 good luck food list, and rightfully so. Leafy greens are essential in maintaining a healthy body and immune system. They are loaded with vitamins and minerals, and unfortunately most of us don’t eat enough of them. Though the superstitious will say greens are lucky because they resemble paper money, in my opinion good health is can be a lucky thing too! I don’t consider myself a superstitious person; but I think this year I’ll serve the salad alongside a pork roast to symbolize progress too! Happy Holidays!
Happy Holidays ~ Lucky Arugula Salad
INGREDIENTS
Serves 4-6
- 4 cups of baby arugula
- 1 small red onion - roughly chopped
- 1/4 cup sun dried tomatoes - julienne sliced
- 1/4 cup blue cheese, or goat cheese
- 2 tablespoons Extra Virgin Olive OilINSTRUCTIONS
- Place arugula in a salad bowl
- Top with sliced onions, tomatoes and cheese
Drizzle with olive and toss gently
