- Cook pasta according to package directions. While pasta is cooking, saute/fry the garlic, onion, and oil in a large frying pan over medium heat. Add in rosemary, parsley, and chicken broth; simmer till sauce has reduced by half (about 4 min). Add in mushrooms and zucchini and cook an additional 4 min.
- When pasta is done, drain and add in to sauce. Add in salt and pepper to taste. Toss well till the pasta is coated. Toss in Parmesan cheese. Garnish with additional parsley, if you like. Serve immediately.
- This recipe yields 4 to 6 servings.
