Rigatoni with bacon and asparagus

This is great when asparagus is in season. My son loves this dish.

Ингредиенты

  • 1 lb rigatoni pasta
  • 1 lb asparagus , coarsely chopped
  • 8 slices of bacon (12oz), sliced thinly
  • 1 clove garlic, crushed
  • 4 tbsp butter, chopped
  • 1/2 cup freshly grated parmesan cheese
  • 1/2 cup finely shredded mozzarella cheese
  • 1/2 cup heavy cream
  • 1/4 cup chopped fresh flat leaf parsley

Инструкции

  1. Cook pasta in large pot boiling salted water, uncovered, til al dente
  2. Boil or steam asparagus till just tender.
  3. Cook bacon in lg non-stick skillet, stirring, until crisp. Add garlic, cook till fragrant.
  4. Place drained pasta, asparagus and bacon mixture in a lg bowl with the butter, cheeses and cream. Toss gently, sprinkle w parsley.
