%20Today%20we%20have%20my%20best%20bud%20Jeanne!%3C/p%3E%3Cp%3EWhen%20I%20met%20Steph%20a%20few%20years%20ago,%20we%20learned%20very%20quickly%20that%20we%20have%20a%20lot%20in%20common.%20Tons%20of%20our%20conversations%20started%20with%20a%20story%20and%20ended%20with:%20%22Me%20TOO!%22%20We%20have%20the%20same%20birthday%20(albeit%20a%20year%20apart),%20we%20have%20crazy%20curls,%20we%20swam%20tons%20as%20kids,%20we%20craft,%20we%20camp,%20we%20have%20a%20serious%20addiction%20to%20the%20library,%20and%20when%20it%20comes%20to%20baking,%20we%20can't%20leave%20well%20enough%20alone.%20Recipes%20are%20more%20like%20guidelines%20anyways,%20aren't%20they?%3C/p%3E%3Cp%3ENow,%20I%20don't%20know%20about%20you,%20but%20I'm%20so%20excited%20for%20local%20summer%20produce%20to%20start%20showing%20up%20on%20my%20table.%20It%20doesn't%20get%20more%20local%20than%20when%20you%20pick%20it%20out%20of%20your%20own%20garden.%20Okay.%20I'll%20admit%20it,%20the%20only%20thing%20that%20is%20ready%20in%20my%20garden%20right%20now%20is%20rhubarb.%20And%20that's%20probably%20because%20it's%20a%20weed.%20But%20it's%20one%20tasty%20weed%20let%20me%20tell%20you.%20I%20love%20baking%20with%20it!%20In%20the%20past%20month%20I've%20made:%20Rhubarb%20cake,%20rhubarb%20crisp,%20rhubarb%20square,%20stewed%20rhubarb...%20But%20today%20I'm%20here%20to%20talk%20about%20a%20favourite%20of%20mine:%20Rhubarb%20muffins.%3C/p%3E%3Cp%3EWait...%20Is%20that%20heavenly%20music%20I%20hear?%20Hells%20yeah%20it%20is.%3C/p%3E%3Cp%3EI%20got%20this%20recipe%20from%20my%20SIL,%20and%20while%20it%20was%20a%20pretty%20damn%20awesome%20when%20she%20made%20it,%20I%20just%20had%20to%20tweak%20it.%3C/p%3E%3Cp%3EOriginal%20Rhubarb%20Muffins.%3C/p%3E%3Cp%3EIn%20a%20large%20bowl%20add%20and%20combine%20well:%3C/p%3E%3Cp%3E2%20Eggs%3C/p%3E%3Cp%3E1%20C%20Sugar%3C/p%3E%3Cp%3E1/4%20C%20oil%3C/p%3E%3Cp%3E1/2%20C%20plain%20yogurt%20or%20buttermilk%3C/p%3E%3Cp%3E1%203/4%20C%20chopped%20rhubarb%3C/p%3E%3Cp%3EIn%20a%20smaller%20bowl%20combine%20well:%3C/p%3E%3Cp%3E2C%20All%20Purpose%20Flour%3C/p%3E%3Cp%3E2%20tsp%20b%20powder%3C/p%3E%3Cp%3E1/2%20tsp%20b%20soda%3C/p%3E%3Cp%3E1/2%20tsp%20salt%3C/p%3E%3Cp%3E1/4%20tsp%20cinnamon.%3C/p%3E%3Cp%3ECombine%20wet%20and%20dry%20ingredients%20and%20fold%20together%20gently%20until%20just%20mixed.%20Spoon%20into%20prepared%20pan.%20Bake%20at%20375F%20for%2025minutes.%20Remove%20from%20pan%20and%20cool%20on%20rack.%3C/p%3E%3Cp%3EWhat%20did%20I%20change?%20Just%20the%20normal%20substitutions.%20Reduced%20the%20sugar.%20Apple%20sauce%20instead%20of%20oil.%20skim%20milk.%20And%20what's%20up%20with%201/4tsp%20cinnamon?%20That's%20nothing!%3C/p%3E%3Cp%3EAdded%20MORE%20rhubarb.%20These%20are%20rhubarb%20muffins%20after%20all!!%20And%20when%20it's%20growing%20like%20a%20weed%20and%20you%20aren't%20paying%20through%20the%20nose%20for%20it,%20might%20as%20well%20use%20it,%20right!?%3C/p%3E%3Cp%3EMy%20Rhubarb%20Muffins.%3C/p%3E%3Cp%3E2%20tsp%20cinnamon.%3C/p%3E%3Cp%3Edash%20nutmeg%3C/p%3E%3Cp%3EEat.%20Enjoy.%20Or%20like%20me,%20take%20it%20to%20a%20gathering%20of%20friends%20and%20get%20rave%20reviews!%20:)%3C/p%3E%3Cp%3EWhat%20recipes%20do%20you%20normal%20tweak?%20How%20would%20you%20modify%20this%20recipe?%20Add%20strawberries?%3C/p%3E){kind=link}
