Рецепт Retro - Cream Salad Dressing
I scored some awesome organic produce last week as part of an organic food coop, and part of my haul was a Butter Lettuce. See it? All the way to the top, of the picture that is.
I knew I wanted to treat this with respect and kindness, cause Butter Lettuce is soft and gentle. I wanted something that high-lighted the taste, but didn't overpower it.
But this post is about the dressing. My sister in law introduced me to this many years ago, and I was intrigued. It was creamy, slightly sweet and totally awesome. I don't know if she added vinegar, but I thought it needed just a little oomph. I used some Seasoned Rice Wine Vinegar for one salad and some Gravenstein Apple White Balsamic Vinegar for the other salad.
OMG it was good.
Just three ingredients, all of which you can probably pronounce. Nothing fancy here.
Heavy cream or whipping cream
Sugar
Rice Wine Vinegar or another mild flavoured vinegar.
That's it.
To dress one salad
- Recipe: Cream Dressing
- 3 tablespoons Heavy Cream
- 1/2 tsp. Sugar
- 2 tsp. Rice Wine Vinegar
- or
- 2 tsp.Gravenstein Apple White Balsamic Vinegar
Whisk together the cream, sugar and vinegar until slightly thickened. Taste and add a touch more vinegar or sugar if you like. There is this chemical reaction that happens when you add vinegar or acid to cream. It thickens it, sometimes a lot. Just wanted you to know that. Cause this will get lovely and thick.
Pour over well washed and dried Butter Lettuce (or other soft lettuce). And I want to reiterate, well washed and dried. Cause if you don't, it can get a little, umm, gritty. I've done that before.
Serve.
I know I could have added some sliced apple to my salad and in fact I did with the second salad I made.
See how lovely and thick it is? Doesn't even drip down the side of the pretty little bowl I had it in.
and it is 'Dip Worthy' as well.
With the apple added. I had a lovely Honey Crisp apple in the fridge and it tasted so good with the lettuce and that lovely dressing. .
I would have licked the bowl when I was finished, but that would have been downright rude.
