1 c. Prepared mayonnaise 1 x Scallion, (3 inches of green left on) 2 tsp Tiny capers, minced 1 Tbsp. Flat leaf parsley, (minced) 1 Tbsp. Dijon-style mustard

2 tsp Whole-grain mustard 1 tsp Tarragon vinegar 1/4 tsp Tabasco sauce     Salt and freshly grnd     Black pepper, to taste

1. Combine all of the ingredients in a small bowl. Chill, covered, till time to use.
2. Makes 1 1/4 c..
3. This is a lovely dipping sauce to make fresh. It's similar to tartar sauce but with the spices of Louisiana.
