Reese’s Cookies
Around here, one of our favorite ice cream toppings is any kind of chips that come in a bag-chocolate, butterscotch, peanut butter–you name it. If it comes in a “chip” it’s fair game for putting on a huge bowl of ice cream. So in my attempt to clean things up a bit in a few of my cupboards, I ran across several half eaten bags of chips and thought I’d mix them up and put them in a cookie The obvious pick was the peanut butter chips and chocolate chips. So here you go–a perfect cookie…
Reese's Cookies
Ingredients:
- 1 cup butter (2 sticks)
- 1 1/2 cups sugar
- 1 cup Reese's creamy peanut butter
- 2 eggs-room temperature
- 1 teaspoon vanilla
- 2 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup peanut butter chips
- 3/4 cup chocolate chips
Directions:
Preheat oven to 350 degrees. In a stand mixer, cream the butter and sugar until light and fluffy. Add peanut butter, beat until smooth. Add the eggs and vanilla and beat well. Add the flour, baking soda and salt and blend well. Stir in the chips. Using a small scoop, place dough balls on a Silpat lined cookie sheet. Bake of 9-10 minutes or until brown. Cool on a wire rack and just try not to eat until you have a stomach ache!
**I usually make a double batch, then place a piece of parchment paper on a cookie sheet, make dough balls, put them on the sheet, freeze them until firm, then label and put them in a container for either eating (the boys love frozen cookie dough) or for making quick cookies when the kids get home from school.
