Did you see the fun ice cream cake I posted about yesterday? I think between the cake, these cookies, and the puppy chow snack mix from Friday, it is safe to say I have jumped on the Red Velvet band wagon. Until I started blogging I really didn’t know what red velvet was. Now, it seems necessary to jump on board when everywhere I turn red velvet is going crazy. For those of you who are not red velvet fans, I promise this is the last recipe for this year!

For these red velvet cookies I used the leftover cake mix from the puppy chow. So they kind of had to be made, don’t you think? I mean, what else are you going to do with half a box of cake mix and half a bag of M&M’s. A couple years I made my first cake mix cookies, and they were so easy. The cookies come together in just a few minutes, no mixer required, and they bake up thick and chewy. My husband was on the phone with his parents when I decided to make these. Before he was even done talking to them, they were out of the oven. I am all about quick gratification with my desserts!

I am writing the recipe using a full box of cake mix. But if you have made the puppy chow, like I did, you will have about 1/2 a box of cake mix left. So I cut the recipe in half, and then just added a little bit of milk to get a dough. If you don’t have M&M’s, you can easily add chocolate chips instead. Either way you will get the bursts of chocolate that all cookies need.

Red Velvet M&M Cookies

Serves: 2 doz

Prep time: 5 mins

Cook time: 10 mins

Total time: 15 mins

Thick and chew red velvet cookies made from a cake mix. Super quick and easy.

Ingredients

1 box Red Velvet Cake mix

Instructions

Preheat oven to 350 degrees.

In a large bowl whisk together cake mix and flour. Add eggs, canola oil, and vanilla. Mix until well combined. Fold in M&M’s.

Scoop small balls of dough onto a baking sheet. Top with additional M&M’s if desired.

Bake for 10 minutes. Remove from oven, and let cool on baking sheet for 5 minutes before removing to a wire rack.
