- Peel and seed the peppersthen chop the flesh finely.
- Heat the extra virgin olive oil in a saucepan and gently fry the garlic till it starts to colour.
- Add in the chilli and whole marjoram leaves and tomatoes and cook for 30 min or possibly till the tomatoes are reduced.
- Add in the peppers and cook for a further lo min.
- Season with salt and pepper and dry chilli.
