I took my three month-old to the U.S. Embassy last week to apply for his passport and certificate of birth abroad. You’d think this process would be pretty straightforward- documents in, documents out, sign a form, presto! Why is it then, that I always have trouble sleeping the night before an embassy appointment?
Besides the threat of a traffic jam making us late for the appointment, I always worry that I don’t have all the documents I need. I store important papers in a green filing envelope in the desk, but between doctor visits, embassy runs, and travel, things get strewn and I get stressed. This visit was no exception.
As Husband and I headed out of the house, both babies tucked into their carseats and predictably ten minutes late, we merged into traffic and I realized a passport was M.I.A. Later at the embassy, when we were called to the counter the consular officer questioned me about the absence of good proof of my physical presence in the U.S. My heart almost stopped.
Thankfully, this story has a happy ending. Sometime in the next fourteen days my son will be a bonafide U.S. citizen and my blood pressure will be back to normal.
After this kind of ordeal, I needed some serious comfort food. There’s nothing better than a fluffy cheddar biscuit smothered in garlic butter to take me to my happy place.
This Red Lobster biscuits copycat recipe is quick, easy, and a palette pleaser. I dare say these cheddar garlic biscuits are even better than those served in the restaurant.
Store-bought baking mix makes the entire process fast! I used a pouch of Bisquick labeled to make six biscuits. Apparently I made them small because I ended up with eight. Leftover cheddar garlic biscuits made lunch the next day even tastier!
Red Lobster Biscuits Copycat
Ingredients
- 2 1/2 c. baking mix
- 1 c. grated cheddar
- 3/4 c. cold milk
- 4 T. cold butter
- 3 cloves garlic, minced
- Butter Topping
- 1/2 c. butter, melted
- 2 cloves garlic, minced
- 1/2 t. salt
- 1/4 t. parsley
Instructions
Preheat oven to 400F. With fingertips, mix cold butter with baking mix until the mixture resembles gravel.
Toss in cheese, milk, and garlic and combine with as little disturbance as possible. Drop heaping tablespoonfuls onto ungreased baking sheet and bake 12-15 minute
In a small bowl stir together butter topping ingredients. While still piping hot, brush biscuits liberally with melted butter mixture.2.2
