One evening not long ago the four of us sat at the kitchen table playing the card-board game Sequence. Just for the record, Ken and Madeleine managed to beat Gregory and me 2 games to 1. To what shall we attribute this victory? Luck? Good strategy? Cheating? (No!)

We shall attribute their win to the fact that Madeleine had eaten BRAIN-FOOD: salmon.

According to WHFoods.com, salmon is a food that has the ability to improve cognition and mood. At our dinner table that night we had eaten one of our favorite salmon dishes: Baked Salmon with Fresh Baby Spinach. It’s the recipe with the delicious soy, ginger, and orange flavor in the sauce. Delicious. We had been joking about the brain food data at dinner so when trying to figure out how Gregory and I had lost to Madeleine and Ken the pronouncement came that the win was probably because Madeleine had eaten such a good meal of salmon, aka brain food! Needless to say, we chuckled for a while over that one.

Tonight we had another salmon dish that’s likely to become as popular as the baked salmon with spinach. This new Red Curry Glazed Salmon recipe was very easy to put together, quick to make, and cooked in less than 10 minutes.

There’s a nice kick from the curry and the brown sugar adds just a hint of sweet that enlivens the natural sweetness of the salmon.

Red Curry Glazed Salmon

Serves 4

Ingredients

Directions

Heat broiler. Place the salmon on a foil-lined broiler proof baking sheet.

In a small bowl, mix together the curry paste, oil, sugar, ½ teaspoon salt, and ¼ teaspoon pepper.

Dividing evenly, brush the salmon with the curry paste mixture.

Broil until the salmon is opaque throughout, 5 to 7 minutes.
