- Fry a large onion which you have peeled and minced finely with a clove of garlic in a little extra virgin olive oil till it is soft. Add in 3 finely minced capsicum, seeds removed and two minced tomatoes and salt and pepper to taste.
- Cook till the capsicum is soft then add in half a c. cream and taste for salt and pepper.
- Bring back to the boil and serve with cooked asparagus.
