.%3C/p%3E%3Cp%3EBecause%20of%20his%20current%20(temporary)%20diet%20restrictions,%20he%20has%20been%20trying%20really%20hard%20to%20avoid%20desserts,%20so%20I%20thought%20about%20creating%20a%20sweet%20suprise%20with%20strawberries%20that%20would%20be%20low%20on%20added%20sugar,%20zero%20refined%20flour%20and%20minimal%20cream/butter/fat.%3C/p%3E%3Cp%3EStrawberry%20Yoghurt%20Ice%20Cream%20seemed%20the%20perfect%20answer%20to%20fit%20all%203.%3C/p%3E%3Cp%3EAn%20online%20search%20revealed%20that%20David%20Lebovitz's%20Recipe%20was%20the%20most%20adapted,%20so%20it%20seemed%20like%20a%20good%20starting%20point.%3C/p%3E%3Cp%3EThis%20was%20my%20first%20attempt%20at%20making%20ice%20cream,%20so%20I%20improvised%20a%20lot%20as%20I%20went%20along.%20So,%20not%20all%20the%20ingredients%20are%20visible%20in%20my%20first%20picture%20:)%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3E1/2%20a%20kilo%20of%20strawberries%20cleaned%20and%20sliced%20(it%20doesn't%20matter%20if%20you%20feel%20like%20eating%20some%20as%20you%20go%20along,%20go%20ahead)%3C/p%3E%3Cp%3EI%20saw%20recipes%20that%20called%20for%20cooking%20the%20strawberries%20before%20mashing%20them,%20but%20decided%20against%20using%20this%20extra%20step.%20I%20think%20it%20gave%20a%20fresher%20taste%20to%20the%20ice%20cream.%3C/p%3E%3Cp%3E400gm%20jar%20of%20Nestle/Amul%20Dahi%20(yoghurt)%20-%20this%20is%20standard%20size%3C/p%3E%3Cp%3Ea%20few%20sliced%20pistachios%3C/p%3E%3Cp%3EPreparation:%3C/p%3E%3Cp%3ESlice%20the%20strawberries%20and%20toss%20them%20with%20the%20vodka%20and%20sugar.%3C/p%3E%3Cp%3E(I%20almost%20added%20Absolut%20Peppar,%20in%20my%20hurry%20-%20wonder%20how%20that%20would%20have%20tasted?)%3C/p%3E%3Cp%3EI%20would%20have%20avoided%20the%20sugar%20completely%20but%20the%20mass%20opinion%20seemed%20to%20be,%20that%20adding%20sugar%20to%20the%20berries%20made%20the%20end%20product%20redder.%20Something%20to%20do%20with%20oxidation%20I%20guess.%20But%20next%20time,%20I%20will%20use%20Stevia/Sugar%20Free,%20but%20only%20if%20the%20strawberries%20aren't%20sweet%20enough.%3C/p%3E%3Cp%3EHang%20the%20curd/yoghurt%20in%20a%20muslin%20cloth%20and%20let%20the%20whey%20drain%20out.%3C/p%3E%3Cp%3EI%20did%20this%20both%20simultaneously%20and%20left%20them%20for%202%20hours,%20occassionally%20tossing%20the%20strawberries.%3C/p%3E%3Cp%3EAt%20the%20end%20of%202%20hours,%20the%20strawberries%20had%20reddenned%20from%20their%20previous%20pinkish%20tinge%20as%20seen%20below.%3C/p%3E%3Cp%3EPuree%20the%20strawberries.%3C/p%3E%3Cp%3EI%20used%20the%20hand%20held%20mixer%20for%20the%20whole%20process.%20But%20given%20the%20amount%20of%20liquid%20these%20strawberries%20manage%20to%20emanate,%20I%20may%20just%20pulverise%20them%20in%20a%20liquidiser%20next%20time,%20to%20save%20myself%20the%20splashing.%3C/p%3E%3Cp%3EThe%20liquid%20was%20a%20really%20deep%20red.%3C/p%3E%3Cp%3EAs%20I%20mentioned%20earlier,%20these%20weren't%20the%20freshest%20strawberries,%20so%20I%20ran%20the%20liquid%20through%20a%20sieve%20to%20take%20off%20the%20skins%20that%20hadn't%20completely%20disintegrated.%20You%20can%20see%20in%20the%20picture%20below,%20that%20I%20had%20a%20lot%20of%20stuff%20that%20needed%20to%20be%20taken%20out%20although%20I%20might%20have%20got%20a%20finer%20end%20product%20and%20less%20wastage,%20if%20I%20used%20the%20liquidiser.%3C/p%3E%3Cp%3EIf%20your%20strawberries%20are%20fresh%20you%20may%20not%20need%20this%20step.%3C/p%3E%3Cp%3EIf%20you%20hate%20the%20feel%20of%20seeds%20in%20your%20ice%20cream,%20then%20you%20will%20want%20to%20sieve%20the%20liquid%20through%20a%20slightly%20finer%20wire%20mesh.%3C/p%3E%3Cp%3ESince%20I%20had%20already%20sieved%20the%20strawberry%20juices%20into%20another%20bowl,%20I%20decided%20to%20start%20with%20the%20hung%20curd%20and%20slowly%20add%20the%20juice%20to%20prevent%20major%20splashing.%3C/p%3E%3Cp%3EAs%20you%20can%20see,%20the%20hung%20curd%20is%20really%20thick,%20almost%20like%20cottage%20cheese.%20The%20more%20whey%20you%20remove%20from%20the%20yoghurt,%20the%20creamier%20will%20be%20the%20end%20product.%3C/p%3E%3Cp%3EIf%20your%20strawberries%20aren't%20too%20tart,%20you%20may%20like%20to%20add%20a%20squeeze%20of%20lemon%20juice%20to%20the%20mix.%3C/p%3E%3Cp%3EGradually%20add%20the%20strawberry%20juice%20and%20beat%20lightly%20till%20you%20have%20a%20creamy%20mixture,%20darkish%20pink%20in%20color.%3C/p%3E%3Cp%3EIf%20you%20have%20an%20icecream%20maker,%20this%20would%20be%20the%20time%20to%20use%20it.%3C/p%3E%3Cp%3EI%20don't%20have%20an%20ice%20cream%20maker%20(yet)%20so%20I%20had%20to%20do%20the%20-%20take%20out%20of%20freezer%20every%2030mins%20and%20whip%20again%20to%20break%20up%20icicles%20routine.%3C/p%3E%3Cp%3EYou%20can%20use%20an%20immerision%20blender,%20or%20old%20fashioned%20elbow%20grease%20and%20a%20whisk%20for%20this.%3C/p%3E%3Cp%3ESince%20the%20water%20had%20been%20drained%20out%20of%20the%20yoghurt,%20I%20just%20did%20this%20twice.%20The%20second%20time%20I%20saw%20that%20there%20weren't%20too%20many%20icicles.%3C/p%3E%3Cp%3ESo%20at%20this%20stage%20(when%20no%20more%20whipping%20was%20in%20order)%20I%20added%20the%20sliced%20pistachios%20and%20gently%20folded%20them%20in%3C/p%3E%3Cp%3EThen%20I%20added%20some%20honey%20and%20folded%20it%20in.%3C/p%3E%3Cp%3E(This%20inspiration%20came%20from%20some%20honey%20in%20an%20ice%20cream%20I%20ate%20recently%20and%20I%20loved%20the%20texture%20of%20the%20frozen%20honey,%20plus%20this%20adds%20a%20bit%20of%20sweetness.%20Unfortunately,%20the%20honey%20I%20had,%20may%20not%20have%20been%20of%20very%20good%20quality%20because%20I%20saw%20it%20release%20a%20little%20water%20when%20I%20next%20took%20it%20out%20of%20the%20freezer.%20It%20did%20taste%20fab%20though)%3C/p%3E%3Cp%3EThe%20pistachios%20will%20powder%20if%20you%20whip%20them%20and%20you%20want%20the%20honey%20to%20remain%20in%20streaks,%20not%20blended%20into%20the%20ice%20cream.%3C/p%3E%3Cp%3EYou%20can%20even%20add%20some%20bits%20of%20fruit%20at%20this%20stage%20if%20you%20want%20a%20fresher%20feel%20in%20the%20ice%20cream.%3C/p%3E%3Cp%3EServe%20garnished%20with%20pistachios/honey/mint%20sprigs/strawberries.%3C/p%3E%3Cp%3EIts%20slightly%20melted,%20because%20it%20took%20me%20awhile%20to%20get%20the%20picture,%20but%20if%20you%20look%20on%20the%20right%20half,%20you%20get%20an%20idea%20of%20the%20texture.%3C/p%3E%3Cp%3EThis%20recipe%20gave%20me%20roughly%201/2%20a%20liter%20of%20ice%20cream.%20Will%20definitely%20double%20quantities%20next%20time.%20With%20the%20amount%20of%20time%20and%20effort%20needed,%20might%20as%20well%20make%20a%20big%20batch%3C/p%3E%3Cp%3EThis%20is%20an%20ideal%20way%20to%20use%20up%20leftover%20fruit%20(semi%20pulpy%20-%20berries,%20mangoes,%20kiwi),%20especially%20in%20the%20summers.%20And%20with%20the%20temperature%20here%20touching%2040C,%20it%20is%20a%20very%20welcome%20treat%20any%20time%20of%20the%20day.%3C/p%3E%3Cp%3EEquipment%20that%20may%20be%20of%20help:%3C/p%3E){kind=link}
