It’s time for another avocado recipe! If you haven’t read my post from earlier this week, the recipe reduxers are being challenged to come up with a recipe using California avocados for the perfect summer get together. Putting an avocado recipe together doesn’t really seem to be a challenge to me. They are so versatile and delicious; they can be used in salad dressings, sauces, substitutes for cheese and other unhealthy fats and you can even use them to make ice cream. Here is one of my favorites using mostly fresh and local ingredients. This salad is cool and refreshing, perfect for a hot day even if you are not having get together.
Avocados are an amazing food; creamy, delicious and healthy and that’s a win/win in my book. An average avocado contains approximately 250 calories and even though they are considered to have a high fat content; it is the good fat – so enjoy! They are naturally cholesterol-free, California avocados are a creamy and nutritious alternative to saturated fat laden spreads, toppings and dips. If that’s not enough, they are have more potassium than a banana and have anti-inflammatory qualities . Try out this tasty salad with a Tex/Mex flair – be sure to make enough, it doesn’t seem to last very long!

[Recipe Redux] Quinoa and Avocado Salad
INGREDIENTS
- 1 Cup of uncooked quinoa
- 1/ 2 Diced Red Onion
- 2 Medium sized tomatoes diced
- 1 Jalapeno pepper - chopped(optional)
- 3/4 Cup of cooked corn (fresh off the cob or from frozen)
- 2 Avocados - diced
- 1/2 Cup of fresh chopped cilantro
- Dressing:
- Juice of one Lemon
- Juice of one Lime
- 1/2 Cup of olive oil
- 1/4 Teaspoon of chili powder
- 1/4 Teaspoon cumin
- 1 Clove of garlic crushed
INSTRUCTIONS
Cook the quinoa according to package instructions - cool and place in a bowl
Combine the chopped vegetables (except the avocaodo and cilantro)
Prepare the dressing and pour over quinoa vegetable mixture
Add cilantro and avocado and gently toss
Refrigerate and serve chilled
