The recipe reduxers have been challenged by the National Honey Board to develop creative ways to use honey. Since I’ve stopped using sugar a few years ago, honey has been a staple in my kitchen and is my sweetener of choice. Honey is a naturally sweet and it has many more healthy benefits than sugar. I use it to sweeten anything that I used to sweeten with sugar, and I end up using less of it since honey has a sweeter taste. Honey can be substituted for sugar in most recipes by using half the amount of honey to sugar. I typically choose local for many reasons; mainly because it tastes better, it’s 100% pure honey, and I am supporting local business. Local honey can also help in allergy treatment by de-sensitizing allergy sufferers to local pollen. One thing I didn’t know until recently is that The National Honey Board’s website has a honey locator which makes it easy to find different varieties of honey including local honey. Just go on to their website honeylocater.org and you can search for different types of honey by location, floral source, origin and a few other criteria. They have some interesting honey facts on there too; it’s worth taking a look at if you like honey.

The recipe that I am sharing is for Frozen Yogurt Pops With Fresh Strawberries and Mint. Summer is here, strawberries are in season, I just picked a 3 pounds of them from a local farm the other day.

These popsicles make a refreshing dessert on a warm summer evening, or any time of day for that matter. If you don’t have strawberries, you can substitute them with any type of fruit.

Recipe Redux National Honey Board Challenge

INGREDIENTS

INSTRUCTIONS

Mix yogurt, ½ cup of strawberries , honey and mint together in a food processor and blend - mixture will turn light pink

Stir in reserved berries and fill the popsicle mold until ¾ full place in freezer

Freeze for 1 ½ to 2 hours
